Spring Greens

Hello All :hello:
Just a quickie really, i got my shopping delivered yesterday and included was 2 x packs of spring greens which i love :drool:
2 questions
1) i am the only person in the house that eats them and there is no way that i'll be able to eat that amount in 2 days :eek: so can i just bung a bag in the freezer or would i have to cook them 1st ?
2) what other stuff apart from boil and stir fry can i do with it ??

I was looking for blanching instructions for spring greens (because I'm fairly sure you would need to before freezing) but instead found a couple of nice recipes for you to try...

How about chinese style "seaweed"?
Shred the greens very finely and deep fry in small batches in hot oil. Drain on kitchen paper. Mix 1 teaspoon of salt with 1 tablespoon of sugar - use a pinch of this to season your greens. Serve. If you like, you can sprinkle some toasted sesame seeds on top before serving too.I have the mind of a criminal genius. I keep it in the freezer next to Mother....0 -

I've been known to add in left over roast potato and roast parsnip too.

Leftovers are the tastiest. I mash carrots swede parsnip potato greens together . in fact anything left over then fry lightly.
Isn't the fancy name rissoles a mix of leftovers?. Can't remember what's in them though.0 -

Hello... I feel a bit stupid asking this but are spring greens a vegatable or is it an umbrella term for various green veg that comes out in spring? I need some for a recipe!
I've never seen spring greens in the supermarket. what could I use instead?

Spring greens are like a cabbage but the leaves are loose and not tightly wrapped together like a normal cabbage, if that makes sense!
I know they sell them in Tesco as I buy them regularly from there, and are quite a popular vegetable so should be available almost anywhere, especially this time of year

What recipe are you're making as that might help determine what to use as an alternative, but I should imagine any leafy green veg such as kale, spinach, pak choi or even a normal green or savoy cabbage would work?"An Ye Harm None, Do What Ye Will"

spring greens are cabbages the are harvested early ( march to may).they are great shredded and added to a small quantity of boiling water..inch depth in a pan..serve with black pepper and a dash of butter..they look like an elongated bunch of green leaves usually two or more in a pack0
