I had my mushrooms sub'd with summer greens in my veg box
any veggie ideas what to do with them? usually I would use them in place of spinach but I had a huge bag of that also. it's been a very green box this week DH isn't going to be a happy bunny..be windy in Cornwall this week

I've been thinking about this, on and off for the last three hours.
Well its hardly the same thing is it (rolls eyes), I think I'd be emailing them on the matter to be honest. After the three hours of thoughts all I've come up with is to use like I use kale as a side of veggies. Saucepan full of boiling water off the heat, plunge in the water and put the lid on for a few minutes then serve.

It's just one of those things really you get what they have, but I try not to buy any other shopping but don't think I will get away with it this week so far i have
spinach & ricotta tart
Egg mayo&spinach sandwiches
spinach & ricotta cannelloni
vegetable stirfry (using the greens)
and stuffed greens (dolma)
thats all i can come up with but we will be green'd out by then anyway can i freeze the stuff ?0 -

I don't know really, I freeze spring cabbage but I would imagine cabbage is crisper than summer greens (is it the same as spring greens?)
You could always pop some of it in the freezer now, wait until tonight then defrost tonight and see how it turns outto defrost I'd just plunge in water. I wouldn't leave it to defrost it might turn out soggy.

I could eat anything green except greenfly!!
Spring or summer cabbage - try `cabbage & bacon` - you can use ham or bacon, good for using up leftovers or you can use the cheap off-cut bits that are often on sale.
Chop up the ham/bacon, soften in a good dollop of butter in a saucepan, throw in chopped greens, stir and put a tight lid on. Stir occasionally, try not to add water but can add a bit if you need to. Cabbage should cook in it`s own steam, all buttery & bacony, slightly al dente. With a few new potatoes. Gorgeous!0 -
We were going to have veggie shepherd's pie for tea tonight, but I just realised we have a couple of cabbages (they say 'spring greens' and are long green pointy variety) to use up. Is there anything I could do to incorporate them in to the meal for tonight. The only pie ingredient that really needs using is the mushrooms, so maybe I could make something else with the mushrooms and cabbage instead?
