I think there is a consensus emerging that you eventually wear down your OH with good cooking and good training :) I have to say mine was really not on board about a year ago but a period of low pay for him (self employed ) combined with a focus on healthy eating (both of us) and subtle references to being greener (me) have all combined to help him on his way to being OS. He is also very scared about the credit crunch and is convinced someone will repossess our house at any second and this is helping him to see the benefits of taking some care with money. I am reassuring him BTW but without making him think the battle is won :D and with subtle reminders that it is me being OS that is helping keep the wolf from the door.

That said we have a battle ahead around insulation and heating and I won't feel like I've really won the war until this one is done :)

PS A lazier lentil soup is to fry an onion in some oil till soft, bung in about 230g red lentils, stir for a minute or two, then add stock, preferably marigold bouillon (about 1 litre) and let it all cook for about half an hour or until lentils are soft. Tasty and really fast!
