I made a cucumber and apple chutney a few weeks ago as we grow cucumbers and had loads of them - I can post the recipe for you if you like?
I have yet to taste the chutney as it takes a couple of months to mature!

thanks everyone - i have clipped the recipes i need and will have a "fragrant weekend" turining my present into - well other presents.
currently have 9 jars of dill pickle and twelve of piccalilli - so I think the christmas hampers are officially started.

Yum! You could also make Tzatziki (can't remember the recipe but can get it online somewhere). It wouldn't keep long term, but you could have it as part of a nice dinner one night.0

Grate a clove or two of garlic (smoked if you can get it) into a pot of matural yoghurt, add a couple of big handfuls of grated cucumber (give it a good pat down with kitchen roll to get as much moisture out as possible) and some fresh chopped mint.
Serve with warm bread, over lamb, chicken, kebabs, roasted aubergine or courgettes.... lovely.Some days, it's just not worth chewing through the leather straps....

Does anyone know of any good recipes for cucumbers - specifically for ones that involve cooking them in some way - please?
- also I wonder if its possible to pickle them - in view of the fact that they are standard large size ones (knobbly skin type ones too). I've had bought pickled cucumbers - but they were the small type meant specifically for that purpose.0 -

A way to use cue as a vegetable:- peel the cue and cut in half lengthways and scoop out the seeds. Slice into thickish slices (either straight across or on the slant), about thickness of two £ coins. Saute in butter gently for a few mins, season and serve. If you have any herbs (diil or mint both good) add those for the last minute of cooking. Good with fish.
