Grate the cucmber coarsely. Sprinkle with a little salt and leave to drain in a fine colander or sieve. Press excess moisture out and stir into some thick Greek yogurt. Add some fresh finely chopped garlic if you like (gorgeous!), stir in a swirl of EV olive oil. Leave it to sit for a while if you can resist. Serve with ouzo / bread / crudites / hand-cut crisps/ potato wedges / blobbed on to pasta/ with grilled lamb chops.

ok, so I was out when the local veg shop called for my order, and whoever grabbed my order sheet and gave them the list, assumed that 1/2 a cucumber, meant half a dozen... Now I know i have an Inn, but even I can't get through 5.5 cucumbers before next wednesday!
I did a quick search and came up with things like cucmber sauce to go with salmon etc, and alot of cold soups, and cold salads, but they are unlikely to sell at this time of year, specially in Scotland!
Anyone have any suggestions?
Whilst we are here, I also ended up with the box of tomatoes I wanted, but also ordered some vine tomatos to go with some other specials dishes, BUT! I meant cherry ones, and have ended up with half a crate of full sized ones, on top of the usual box! I have made a MASSIVE roasted tomato and basil soup to freeze down, but any other things that would freeze down and be a bit different would be great! I was thinking along the lines of tomato tarts, or something, no idea what! Preferably things that freeze!

You can pickle cucumbers (I use rice vinegar and sugar so they aren't sharp) with some onions and chilli. Makes it nice with salad.
Tomatoes, you can make pasta sauce with garlic and herbs and freeze them down. Or make tomato chutney and bottle them. I just slice mine and freeze them in trays and use them into whatever I'm cooking.0 -

Very kind local man brought me ten very large cucumbers in yesterday (about 18" long and the size of a tin of beans wide)
What can i do with these (apart from cracking myself up laughing at random "carry on" stylee jokes that keep flitting across my mind)
I've salted three to make New York dill pickle and chopped up two more into a brine bath with a cauliflower and bits to make a vat of piccalilli.
does anyone have some interesting chutney recipes that they can be turned into (thinking i will give everyone a boxing-day basket for their christmas this year)
what else would you do with a jumbo cucumber???

One of our favourite things is a fresh salsa-style dish that has diced cucumber, diced fresh tomatoes, shredded fresh mint, a little finely diced onion, freshly squeezed lime juice and good quality olive oil
We have this with things like chicken kebabs, falafel in pitta, grilled tuna steaks, its lovel and fresh and keeps for a day or two0 -
Could you perhaps treat them as a large courgette and stuff and bake them? Thinking onions, peppers,tomatoes, breadcrumbs etc? Or cheese as with baked marrow?0
