    Apart from red kidney beans, there is no risk of toxins from other beans/pulses, but soaking and rinsing thoroughly before cooking does seem to reduce the production of froth and reduce the f**t power.

    In addition to being cheaper I reckon buying dried is better as it avoids the risk of unwanted substances leeching out of the tins.

    krishna, if you check out the Food Standards Agency website I linked earlier, you will see that soya beans are also potentially dangerous.

    Oh of course, I forgot soya beans. But then they are such a pain to cook I would never bother. Life is too short :)

    yeah, i wish someone had told me they needed cooking for like FIVE HOURS before I'd bought a bag...... :o

    Don't forget that adding just a teaspoon of bicarb of soda in the soaking water will reduce the cooking time by more than half - so you mightn't want to use a slowcooker, will cook 1/2 hour

    Could I just bring this thread back? There is a lot of information here, but what I can't find is the equivalent weight of dry beans/pulses for a tin of cooked ones. Does anybody know? I tend to guess when using recipes specifying tinned, but usually end up on the generous side and have that awkward left over that is not quite enough for another meal.
    Also wondered whether the dry to cooked ratio is much different between beans/chick peas/lentils etc. Thanks in advance for any info!

    I'm just like you, I end up with enough to feed an army.
    But, I have also read that you can freeze the cooked beans.
    No idea as to what dried quantity to use..I suppose that one day I should weigh out an amount and then decide from there how much less I would have needed.

    Yes, I decided to finally experiment with all my dried beans and lentils last week in a big family size veggie shepherds pie. The beans all tripled in size till i had enough for 3 family sized pies! I froze the leftover bean mixture and have just got it out of the freezer today. Just need to bung some mash on top and I have a quick and easy pie ready again.

    Will deffo make more than I need next time again as it's worked out quite well.
