What to do with elderberries?

    It's nice in jam too. Last year I made elderberry, blackberry and apple jelly. DS loves it and I think I may only have one jar left now, so will be making more this year.

    Was wondering if brewed in september and then mixed with spices in dec might make nice mulled wine.If made how longs best for it to mature.

    Anyone used elderberry wine in cooking where recipie says red wine.

    Will try the cordial as my eldest hates cough mediceine so if its seemded like squash or juice.

    Jelly sounds interesting depends how muc I pick I guess as assume I will need some quantity as small berries.I have apples and blackberries growing locally too.

    Elderberry wine is my favourite....doesn't get chance to sit long enough in this house.

    We always use it to SC a bit of brisket for christmas dinner too. Yums.

    Exactly like squash, I use it diluted in hot water as a hot drink. The flavour would be better with a bit of black currant added.

    there is a thread - what to do with elderberries. Have a read and i will merge this later. The Gardening board may be able to answer when they will b e ready

    Also, if it helps - i searched but i couldn't find anything is a great thread which will help you learn how to search :)

    I think it might be a bit early yet - they're normally late summer, and the ones in my garden aren't doing a great deal at the moment. (Midlands)

  • The elderberries near my home are not yet ready - I think it will be at least another month.

    Elderberry is my favourite home made wine. It's full bodied and improves for keeping in the bottle though I use it quite young for mulled wine - delicious! I also add any blackberries I find though there are not so many of those near to me.

    It's great in cooking and any leftovers get frozen in 'cooking' sized portions. Altogether it is a very versatile wine. I estimated last year that it cost me 16p per bottle. It should be cheaper this year because I have found a cheaper source of sugar - 2 1kg bags for £1 in Farmfoods.

    Can you just eat berries raw by themselves .

    Anyone used tem in cakes instead of blueberries maybe.

    I am reliably informed that eating the berries on there own is likely to give you an upset tummy.

    I have 3 large trees just starting to ripen so I am looking for wine making kits at the moment.
