- If you're just going to use the breast meat, you don't need to completely pluck the bird - you can skin it quite easily once you've got some of the feathers off.
- To pluck, take the bird and use your thumb and forefinger to pull out a few feathers at a time. Don't do too many at once or you could tear the skin. Work over the breast and back, tail, legs and wings. Cut off the wing tips, head and neck with poultry shears/strong kitchen scissors. Cut carefully through the crop just above the breast - the bird may have a bit of food stored here, but if it does just rinse it off.
- To gut the bird, use a knife/shears to make a small slit in the skin between the tail of the bird and the point of the breastbone. Wearing rubber gloves, push your fingers inside the cavity and pull out the offal :eek: then wash the bird and treat it like a chicken.
