    Spent €6 on 5 pork chops on Tuesday and €1.80 on milk yesterday, so another €7.80 to add to my total...had better be careful from now on...there's a lot of month left!

    Here is the chutney recipe - if you can get hold of cheap mangoes (Mr Ts ATM) it is a reasonable price. You need to start it the day before you want to make it, IYSWIM....

    Mango & Ginger Chutney

    - 4 firm mangoes totalling 1.4kg (3lb)
    -350g (12oz) light muscovado sugar (I have used bog standard sugar with no ill-effects)
    - large pinch cumin seeds (didn't have any of these so put in 1/2 tsp ground cumin)
    - 4 cardamom pods, split open
    - 1 tsp ground turmeric
    - 1 whole clove
    - 5 cm (2in piece root ginger) peeled & finely grated - I used 1 tsp ready-minced as I have some in. If you like ginger, use a bit more
    - 400ml (14 fl oz) distilled malt vinegar (I have used the brown & white sorts)
    - 3 lge garlic cloves

    1. Peel mangoes with veg peeler, cut flesh away from stone & chop into bite sized chunks & put in a large bowl. Stir in sugar, cover & leave overnight.

    2. Next day, pur misture into large pan & add other ingredients. Bring to boil, reduce heat & simmer gently for about 1 1/2 hrs, stirring occasionally until mango is translucent & xcess liquid has evaporated. (I sometimes ioncrease the heat to do this)

    3. Remove pan from heat & leave chutney to cool for 10 min. Ladle into sterilised jars, top with a waxed disc & seal whilst still hot.

    4. Hide from family to avoid them eating it from the jar on poppadums, cheese sandwiches, meat of any kind or just on its own!! PS this is not a 'hot' chutney, just taste very fresh

    Hello everyone, I haven't been on here since my last update (about 3 days I think?!) as I've been busy trying [STRIKE]unsuccessfully[/STRIKE] to sort out the house and I've been doing a little bit of overtime at work as we have a small mountain to get through :rotfl:. Also the poota is playing up big time so may need to get a new one :mad: . Just a quick update from yesterday. Spent £11.47 in Tesco, and I only need crisps and bananas, but somehow muffins and cava fell into my basket :rolleyes2 so HAD to buy them!! It's hubbys birthday tomorrow and we're going to Wokmania for lunch - I'm not including that in the budget as it's a different budget - honest!!

    Hi everyone :hello:

    Thanks gunsandbanjos :T and getting-sorted-sarah :T for the muffin recipes. I decided to use getting-sorted-sarah's (it had more sugar in it ;):p )
    275g plain flour
    2 teaspns baking powder
    100g sugar

    Mix these together, then for the 'wet' ingredients:

    8 fl oz milk or fruit juice
    3 fl oz veg oil or melted butter
    1 egg

    mix these too.
    Finally mix the wet into the dry - you should't over-stir - just mix till there is no more dry flour. It should be a lumpy-ish batter (depending on what you've put in!). Scrape into 12 muffin cases in a tray and bake for 20 mins ish at 200.

    I swapped 50g flour with 50g cocoa and added 100g mixed choc chips :). I didn't have any muffin cases though so I used normal cake cases instead. Probably would have turned out better in proper cases but I'm impatient and didn't want to wait until next week's shop to buy some.:rolleyes: Anyway, here's the result:

    Just to update you all on the £1.00 coupons from Daily Mail. Asda did except one of these without the spend on pizza but I still managed to spend £2.30 oops!
    I needed peppers for spag bol which I,ve got on the go now, also have mince on the stove. I like to throw my spuds in with the mince, just my little foible (small ones) and have added oats to both dishes to pad them out.
