After reading all these recipes, you lot inspired me to make my own soup. I didnt use any particular recipe, just chopped up a load of veg, added stock and simmered away. It turned out to be cream of parsnip flavour. Why didnt I know how easy it was to make soup before now?!
I've got another pot going now with a different combination of veg to see how that turns out. My kids love soup, so it was a good way of getting them to eat veg without knowing ;D Cant wait till my slow cooker arrives in the next few days, how sad is that lol

yes definatley i buy the dried ones and soak them all at once then boil them all, and freeze them into portions ready to use, that way can throw them striaght into the pot..
how abot broccoli and stilton
1 small onion
1 head of brocolli
2 cloves garlic
salt and pepper to season
1/2 pint chicken stock
some stilton (or blue cheese)
sweat the onion and garlic in a pan and add the broccili and stock and simmer for 30-40 mins.
blend and replace into saucepan to reheat, whisk crumbled cheese in and season.
been told this is lovely (dont know cant eat cheese)

What a brilliant tip on cooking dried beans/peas in one go and freezing. Had never thought of that, how stupid am I? :-[ Especially as when I make a dhal, I make a load and freeze that! ::)0

I made soup with the leftover veg from the roast today - broccoli, peas, green beans and 3 roast spuds, used the water I steamed the veg with. Only added a veg stock cube and a clove of garlic. I blended it and it tastes YUMMY ;DMember no.1 of the 'I'm not in a clique' group :rotfl:

CHEESE & ONION SOUP
one of my faves
fry onions in butter until golden
add flour to make a roux
slowly add 3/4 pint milk and simmer until thick
and onions soft
add grated or crumble and then serve immediately

Just made my first pot of soup ever. Don't know why I have never tried it before as it is very easy. I made the lentil soup recipe posted by asmit, I think.
At least making it yourself you know exactly whats in it. Will definately be experimenting from now on.0 -
Vegetable and Pasta Soup Alla Campania
Sounds grand, but it's one of these really thick, cheap soups you could eat with a knife and fork. ;D No 2 TM isc urrently helping himself to mine (2nd bowlful) as I type.
Ingredients
3 tsp Olive Oil
2 small onions, peeled and chopped
2 stalks celery, peeled and chopped
2 lg cans peeled plum tomatoes in juice
1 lg can chickpeas (drained)
1 tbsp chpped fresh basil
grated parmesan
4 oz Thin Pasta Noodles
Method
Heat oil and cook onion & celery until soft (5-10 mins)
Add tomatoes, simmer for 10 mins
Stir in basil, chick peas and pasta, simmer for 10-15 mins
Serve hot, sprinkled with parmesan.
Absolutely yummy ;D Nicked this recipe straight from the back of the pack of noodles, but it's really lovely and very cheap. Oh, but do watch out at end - you may need to add more water as it does start to get very thick and catch.

Saw this mentioned in another thread so though I'd search for it. Some superb recipes - cheap to make, healthy and count towards the 5 a day.
