    wow, that must be a huge pot of soup! I think. I definitely didn't add the equivalent of 3 mugs of tomatoes or 4 mugs of milk... so there was way too much butter... ewww. makes me think I was drinking more butter than tomato soup :o

    sorry i didn't mean mugs i meant tea cups. sort of half mugs, not the dainty chima things that holsd a thimble fill of tea. i wasn't properly wake that early.

    I made this last night - yummmmmmy ;D

    Sweet Red Chilli Pepper & Tomato soup

    1 tbspn olive oil
    About 15 tomato's skinned, deseeded & chopped
    4 red peppers (these need grilling until black, then take skin off & chop)
    1 red chilli pepper chopped (can leave out if u dont like spice)
    2 cloves garlic chopped
    1pt veg stock
    2tbsnp red wine vinegar

    gently fry garlic, chilli, red peppers in olive oil for 5-10mins until soft. Add tomatoes & cook for another 5-10mins. Add red wine vinegar & simmer for 10mins. Add stock and after cooking for 20mins blend until smooth.

    a bit fiddly 'cos I hate taking skin off peppers & toms but well worth it ;D ;D ;D

  • Potato Soup

    Ingredients

    6 to 8 fist sized potatoes
    1 to 1.5 pints stock ( chicken or vegetable is fine)
    1 Large onion
    large knob of butter and teaspoon of oil
    small tub of fresh cream or elmlea
    handfull of fine chopped parsley

    Method

    Melt butter and oil in a large pot (oil stops the butter burning, but keeps the nice taste)
    Finely chop onion and sweat gently in oil mix
    Peel and chunk potatoes into rough pieces
    Toss these in hot oil mix
    Pour on 1 pint of stock
    Cook until potatoes are tender
    Whizz in a blender until smooth
    You may need to add more stock at this stage as the soup tends to thicken
    Gently heat through again before serving
    Serve with a drizzle of cream and some parsley sprinkled on top and melba toast on the side.

    Enjoy

    Ps This soup tastes even better the next day, just add more stock or water as you heat it through, it thickens as it cools.

    french onion soup

    4 large onions
    1.5 litres stock
    olive oil
    butter
    handful fresh chopped herbs (parsley, sage & thyme)

    *melt butter & add oil
    *thinly slice onions, sweat for about 15 mins til really soft with lid on pan (i also add a bit of water at this stage to stop burning!)
    *add stock
    *simmer for 30 mins
    *add herbs & serve

    yummy - i made the other day. i didn;t use all the herbs as i only had parsley but was still great.
