i'm just eating a bowlful of one i've just made this evening:
carrots
parsnips
onions
veg stock (kallo organic cubes are lovely and not salty)
red lentils
water
teaspoon of cumin
splash lea & perrins
black pepper
i just use as much or as little veg as i have left from the veg box. i just chuck it all in at once and don't therefore need any oil etc. i whizz it up with the handblender at the end. sometimes add swede if i have any too.

I made the lentil soup I posted upthread last night. We didn't have any leeks in so I substituted more onion, and I got carried away and threw in some paprika, grated turnip and tomato, and had it with some warm baguette. It was lovely
My husband said it would have been nicer blended, but hey!

I often put any veg I have in the slowcooker overnight, with veg stock cube and water to cover,
In the morning I sometimes puree it with an electric mix stick in the pot

I have been inspired by this thread and have made my first ever soup.
I used Rach's recipe but omitted the carrots and lentils, added a pinch of curry powder, so it was like a spicy parsnip soup. And if I do say so myself it was bloomin lovely. Especially nice with the reduced crusty bread I got from the co-op.
Only trouble is I over estimated the quantities so have enough to last till christmas.
It was so easy to make that I wanted to experiment a bit more. So i chucked a carrot, red onion in some stock. I didn't have any veg stock left so I used a beef oxo. The end result wasn't very good. Too beefy for carrot soup. Still I'm going to keep it for a beef stew later in the week. Waste not want not.
Thanks to all who posted recipes. This will save me a fortune.

I would always use chicken stock(homemade) or vegetable oxo for 'veg' soups. Use beef stock for 'darker' things like french onion soup and bortsch (beetroot soup) or a simple noodle soup which is quite clear,

1 litre of beef stock, 1 pack tesco value noodles, then according to your taste, a couple of spring onions, a small onion chopped, then a sliced carrot or a handful of sweetcorn. I always add a red chilli chopped up but i am a bit of a spice fiend ;D
Serves as many as you want to.
Takes 5 minutes to cook, the veg should be crunchy.Member no.1 of the 'I'm not in a clique' group :rotfl:

I make cream of vegetable soup at the end of the week using up any lurking veg in veg rack. If vegan use soya milk, soya marge, mushroom ketchup and veg stock.
About 1lb of chopped veg (mainly carrots, onions, potatoes, parsnips)
about one and a half pints of stock (chicken or veg)
seasoning and some mushroom ketchup or worcester sauce
A spoonful of vinegar to bring out the flavour of the veg
Simmer gently until vegetables are soft
Pour into a processor (or use a processor stick in the pan)
Return to the pan and melt in a knob of butter or marge
Then add some milk to the desired consistency, stir and serve with crusty bread. Some paprika on top or black pepper is niceOur days are happier when we give people a bit of our heart rather than a piece of our mind.
