    Hi ,
    I am looking for a recipe for a thick veggy soup that I can make up ,also how long can I keep it in the fridge as I live alone and i/2 gallon of the stuff might be a bit too much to eat in one go.
    Will it store safetly
    Sorry for sounding a bit dense.I made some leek and potato soup last week and it was beautiful, I didn't realise how easy it was to make.

    Hi Jackie,

    Most soup will keep in the fridge for a couple of days.

    If you live alone it is probably more economical, when you make soup, to freeze individual size portions that you can lift out of the freezer as and when you need them. I find that most soups freeze really well.

    You have worried me now. I usually make stock, freeze it, make the soup and then freeze that. (Don't use bacon though)

    I assumed that as the stock was boiled when the soup was made it would be OK

    Have I been risking food poisoning for all these years?

    Our family favorite soup is Cauliflower Cheese Soup, but it's one where I just make it up as I go along, but found this recipe for Golden Cauliflower Soup which seems about the same:

    It's a bit naughty with the cheese in it, but really nice and thick and creamy for dunking chunks of bread into.

    Our version doesn't use the onions or nutmeg or even stock cubes, we do use a mature cheddar, and also add a bit of parmesaan if needed to give a really cheesy taste. It relies on the really fresh cauliflower, the butter and the cheddar for the taste. We also use skimmed milk to cook the cauliflower in, and use the liquid in the soup.

    I do the same. And I also freeze curry sauce. I've never had a problem. As you say, the stock is thoroughly boiled when making the soup so I've never worried about it. I'm not going to start worrying now either :)

    I made roasted Butternutsquash & Onion soup last week, I had to add a lot of water, and it still only served 3 portions (there's only me, but thought it would go further). This is 0 points in WW terms, and nice to have 0 point soup on hand - but is there an easy way to skin a BNS? It was so tough to do, and ended up with hardly any BNS. Anything else I could add to make it tastier? (of the healthy variety)...........

    On the soup subject,, I have a celeric,, I thought it was swede,, shopping with mr is done fast or he sulks ;) but this thing is huge, can you add them to cas?? or soup??
