    another quick easy cold dessert:

    Raspberry "ice cream"
    You need a food processor.
Tip in equal-ish quantities of creme fraiche & frozen raspberries. Add icing sugar to taste - depends how sharp or sweet you like your food (start with less - you can add more if you need to). Whizz til blended & serve immediately.
Very rich - I always serve it in small wine glasses. Nice with a couple of sponge finger biscuits.
The raspberries melt, so it's a bit of a last minute thing, it doesn't keep very well.

I'm thinking of trying it but when the cream penetrates the biscuits do the biscuits go soggy?

Another quick and easy cold dessert:

Put a tin of cherry filling into a pudding bowl, crush 4-6 meringues on top, cover with greek yoghurt, sprinkle with chopped nuts.

    Enjoy!
