What can I do with chicken breast fillets...

    Stuff them with Gorgonzola (on offer in Lidl's :D ) wrap with bacon and cook for 35 mins at 190. Serve them with buttered new potatoes (or roast the new potatoes in the oven with the chicken) and steamed veggies. :drool:

    Stuff with cheese ( mozerella is best but anything would do) then wrap in a rasher of bacon and secure with a cocktail stick, yummy.

    I pull away the "under fillet" bit out so it's like a flap. Bash the chicken a bit with my fist to flatten it out. Spread filling along the length of the breast and then use the under fillet flap to cover the filling. Use a cocktail stick to hold the flap in place. I'm not very descriptive, but I can see in my head what I'm trying to describe :p

    You slit the breast along the thick part and slip the cheese or whatever inside the pocket, hence the cocktail stick to hold it back together. It's like a healthy version of chicken kiev.

    Pesto sauce (from a jar is fine) mixed with a little butter is lovely, and dead easy. Or cream cheese mixed with some crushed garlic and mixed herbs would be lovely. Or pizza sauce and mozzarella would work well. Anything you have around which is fairly soft and gloopy will probably do the trick, provided you like the sound of the finished product!

    IUd just go for a chicken kiev, stuff garlic butter into the breast ( as described above), then flour, egg, breadcrumbs, seal the pocket with a cocktail stick, fry both sides for about 10mins all in, then into the oven @ 200for about 20 mins.

    Serve with potato rosti (MY FAVE) and steamed veg maybe mange tout, baby corn, fine beans that sort of thing
