I like pink-winged's idea. If you cook ALL the chicken breasts like this, and stop before you add the pasta, you can eat some of them (with the pasta) and freeze the rest in individual portions. Then you can
- combine with rice and make a risotto
- add (cooked) curry spices and make a curry
- top with mashed potato and make a chicken potato-topped thing (that sentence started better than it ended!)You can top with cheese if you like
- make some pastry and use it to fill a chicken pie
- reduce a bit of it down and use it to top a pizza
- fry the things you haven't got now (mushrooms, peppers, olives etc etc) and add them to the mix another day and do any of the above for a different tasting dish
- when you have VERY little left, rinse out the saucepan with water (don't throw it away!) and add loads of veggies to make a delicious soup!

get some patak's curry pastes to make different chicken curries ( korma, tandoori etc.) and freeze ready to heat up another time
or wrap in foil with a little oil or butter - or add garlic and herbs, veg - and cookin the oven. It keeps the chicken breasts very moist. then freeze again.
make your own chicken kiev. cut into the breast and pop some butter, garlic and parsley, then coat the whole breast in breadcrumbs.
or just make lots and lots of HM nuggets to refreeze

cook the chicken and cut up into piece's, cook bacon and cup up , then mix into freshly cooked pasta and grate cheese on top. and hey presto chiken and bacon pasta. it yummy.0

My mum wraps chicken breasts in bacon and puts ithem into a casserole dish, she then pours a tin of condensed mushroom soup over it and then bakes it. It is very easy and results in delicious moist chicken in the creamy sauce, everyone raves about it whenever she serves it.0

If you have bbq sauce there is only one dish you should make chicken new yorker!
Grill the chicken breasts (you could poach them), grill/fry bacon. Grate cheese.
Put some bbq sauce on the cooked chicken breasts, put on a slice or two of bacon and smother the whole lot in cheese and then grill until melted. You could finish them off in the oven if you want!

I've got a couple of chicken breasts that need eating and I WAS going to casserole them as usual, but I'd rather do something different; maybe stuff them and roast in the oven perhaps? Thing is what could I stuff them with, and how long would I cook them for?

How about coating them with a BBQ sauce thingy, putting bacon on them then cover in cheese! :drool: :drool: :drool:
Then serve with tiny garlic roast potatoes and a bit of veg! :drool:
