Well at WI , I lost a pound this week, so that's fine with me. Having a red day with a thai red curry soup stir fry kind of thing tonight. I'd usually add noodles to the soup but will have to sin them. Any ideas for sins for red curry paste (I use very little as it's very hot) . The brand I have is not in the sins online (it's not a UK brand) so I need to do a guesstimate.

Mollygrub, here's the recipe for the curry:

    Serves 4, free on green.

    2 onions, sliced
    2 garlic cloves, crushed
    2.5 cm root ginger, grated
1-2 chillies, deseeded and finely chopped
    454g fresh spinach
    fry light
1 tsp each of turmeric, garam masala, coriander seeds, ground coriander and cumin seeds.
    400g tin chopped tomatoes
    400g tin chickpeas
    S and P
2 tbsp chopped fresh coriander or mint

Fry the onions, garlic and giner in frylight for abou 5 mins over medium heat.
Add spices and chillies and cook for further 3 minutes
Stir in tomatoes and spinach and simmer gently for 5 mins (TIP: keep lid off or gets too watery)
Add chick peas and simmer for further 5-10 mins until spinach is wilted and tomato liquid is reduced.
Season to taste and stir in chopped coriander or mint.

    Serve with rice!

    YumYUM

Well, went to weigh in this morning, and despite being on holiday last week I lost 5lb so that makes a total loss of 2 STONE 11LB since the beginning of April.

My next goal (apart from 3 stone!) is 3 stone 3lb which is what my nearly-5-year-old currently weighs!!!!

Good luck to everyone for their WI this week

  • Nice to see you Peachy! You have been missed!

Well...1lb off for me at WI last night. Have to admit to being disappointed with it. I was aiming for 2 to get rid of my holiday/broken foot weight and I thought I'd been good enough to do that. Might need to drink more water and ease off on the HEB Bread!
But, 1 off is 1 off! It makes 5lbs in 10 weeks, but 5 of those I've not been mobile and 3 of those 5 I was on hols in France...so...not toooooo bad overall.

I made the pasta quiche recipe last night and have that for lunch today. Our leader brought in samples of it last night at the meeting and I have to say I was inspired. And free on green too. Excellent!

So, despite moving house on Friday (eeeek!) I am planning an absolutely angelic week and aiming for 2lbs so I can get my first half stone mark.

Keep up the good work everyone!!

    H

PS: Does anyone know if it's safe to follow SW whilst preggers? Not me! A friend at work wants to encourage her hubby to lose weight but also eat healthily during her pregnancy. I forgot to ask at class last night! Thanks

  • I am trying to plan something for dinner on Friday, when we complete and move into our new house! :j

I want to avoid the takeaway trap! So I'm thinking of something I can prepare in advance on Thursday night and then just whack in the oven on Friday night. Any suggestions?
I'm having a green day so thought something like a quorn mince or lentil shepherds pie???

    Any ideas much appreciated!!!

    Thank you

  • I'd say jacket spuds. They can be chucked in a low oven all day while you're coming and going and beans are easy to heat up + an hea cheese. If you're feeling really good chuck half a bag of salad leaves on the side.Shepherd's pie and stuff is a good idea but you don't want to waste time preparing food when you've got packing to do!

  • HellieCopter - I would suggest a simple jacket spud with cheese and beans. The spuds can be left in a low oven all day while you're in and out, beans are easy to heat up and use an hea cheese. You could have toast/cerael (heb) for brekkie and pasta and sauce/mugshots for lunch!Shpherd's pie and stuff is nice but you don't want to waste time cooking, and trying to store it safely, when you've got packing to do!If all else fails you could even get the JP from the chippy!
