If you receive a new sim card in the package then you should use that, it is likely it will be more advanced than the old one (holds more numbers for a etc)
All this should have been explained by Orange over the phone.
If you use the new sim card, you will ring them, and once you turn the old phone off the new phone will work with your original number...
It is likely there is an option on your current phone to "copy" your contacts to sim card... then you can put this sim card in the new phone and "copy" the numbers to the phone...
Do this before you ring them up...

Orange always send a new sim card with a contract phone, part of their security I think...I used to be with them and got a new sim every year when I upgraded, even if i went and picked it up direct from the shop
they used to copy your address book over as well from one sim to the otherEx forum ambassador
