I make tuna and mackerel pate the same way, I mix the fish with philly style cheese, add pepper & herbs to taste, or sometimes a dash of tabasco.

I'm going to cook fresh Tuna for tea tonight, but fancy something different to accompany it.
I have the usual staples, rice, potatoes, pasta, and a huge range of herbs & spices etc.
Anyone have any inspirational ideas please?0 -
How are you cooking the tuna? If it's going to be cooked in a sauce then I would go for a plainer style carbo.
If you are grilling it plain then a moist carbo because tuna can err on the dry side.
Pesto pasta? Lemon and coriander rice? Herby mashed potatoes?
I like couscous with fresh fish and add a fruit juice such as lemon, lime or orange to the couscous with a few garden peas and corn added - you could do something similar with the rice, perhaps?~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Hi foreverskint,
When I'm cooking fish I often do fish 'n' chips by oven cooking the fish in tin foil either alone or with soy sauce, fresh ginger and garlic and accompanying it with homemade potao wedges....par-steamed and coated in veg or olive oil and whatever spices I fancy...usually chilli and pepper and maybe some mixed herbs. HTHTess x

I usually whack it in the oven very high for a few minutes so that it cooks fast & furious, but stays rare in the middle.
I have some cous cous so I could try that, Just trying to think of something saucy to go with it?

I like mine griddled with cajun sprinkled over it and then I roast some vegs in the oven for 20 mins (baby toms, sweet pots, mushrooms, onion etc).
Healthy too!

I have a couple of sauces I sometimes use with tuna, salmon or skate wings and serve with baby new spuds (crushed with butter and black pepper) and a seasonal green veg - broccoli, mange tout or asparagus etc.
Green Salsa
3 garlic cloves
8 anchovy fillets in oil, drained and finely chopped
2 tsp capers, rinsed and drained
4 tbsp olive oil
Juice of 1 large lemon
Handful of parsley, finely chopped
1 bunch watercress, finely chopped
Crush the garlic with a pinch of salt in a pestle and mortar. Add the chopped anchovy fillets and capers. Whisk in the olive oil and lemon juice, then add the parsley and watercress.
Pan fry the tuna for a couple of minutes on high heat before turning over then pour over the salsa and cook for a few mins until heated through. You could cook the tuna separate if you like and heat the salsa just before serving.
Dill Mustard Sauce
1/2 cup mayonnaise
1/2 cup sour cream
3 tbsp fresh parsley, finely chopped
2 tbsp Dijon-style mustard
2 tbsp fresh dill, finely chopped
2 tsp freshly squeezed lemon juice
Salt and freshly ground pepper to taste
Mix all ingredients together in a bowl, then cover and refrigerate for at least 3 hours before serving. You could also miss out the dill and parsley and just have a mustard sauce. This is nice if serving up a salad with the fish but I've also used it with hot meals too.
Or there's a lovely marinade which was posted recently by Noozan ...
Tuna marinade
1 tbsp water
1 tbsp soy sauce
1 tsp sugar
1 tsp oil
1 tsp vinegar
1/2 tsp grated ginger
1 clove crushed garlic
Mix everything together and rub over tuna steak. Leave to marinate for at least 20 mins. Heat griddle (or grill) to very hot. I cook them for about 3 mins each side so that it's still slightly pink the middle, but it depends on how thick your steak is.

Thanks CQ, just used the Tuna marinade and have popped the steaks in their own paper envelopes to cook in the oven.
If it's anything like your curry recipes, I can't wait.

Cheers hun, I can't take credit for the marinade though as it's one of Noozan's recipes, not mine, but I can confirm that it is indeed delicious!
