Is Brown flour just as good for you as wholemeal? I get a bit confused about the milling process. It's just I had a great brown flour loaf come out of my BM whereas I know getting the wholemeal/white flour combination can be a bit tricky.0

Hi Jenny. AFAIK Brown flour is just dyed white flour whereas wholemeal contains the whole grain which makes it heavier and tricker to make a light loaf with.0

I don't think brown flour is "dyed" white flour it just has had more of the whole grain taken out than wholemeal flour but has had less taken out than white. There is a standard that flour reaches to be classed as white, brown, wholemeal etc based on the amount of wholegrain in it. I have it in a book on bread at home but not to hand.0

Brown flour is white flour dyed brown.
Partial wholemeal flour is called wheatmeal and various other names.I used to be indecisive but now I am not sure.0 -
Here is the answer from the millers mouth
"BROWN FLOUR.
This is the name of flour that "has a crude fibre content....of not less than O.6% ". The crude fibre content of Wholemeal is 2-2.5%, so Brown Flour has only one quarter of the crude fibre found in Wholemeal. The legal description makes no mention of the need for any germ at all, and it is usually absent. Usually Brown Flour has colouring matter added to make it look brown, and this is one of the reasons why many people erroneously believe that it is "almost" Wholemeal."

The most important thing with the flour you use in breadmaking is to make sure it is Strong flour you use.I used to be indecisive but now I am not sure.0

Ooh, sorry it is dyed! I only ever use wholemeal or white so never paid that much attention to it - will definitely avoid it.0

i thought this would be another of those kitchen gadgets that was used once in a blue moon, but I use it at least twice a week for lovely home made bread - often use ready made packs like the sundried tomato and parmesan one which is fab - and very easy - best kitchen gadget ever!!!0
