    Hello,
    I think I have the same problem. We've only just got the machine (255). We started with a white loaf that was spot on. I then tried a wholemeal seeded loaf and it came out sunken, and dense, like cake. I realised it was the flour (not strong, oops) and bought some strong wholemeal (stoneground, all that tesco online had available)

    The yeast sachet had been open less than a week, and we had to top it up with a new packet.

    As it looks virtually identical to the last one which I made without strong flour... is the flour still at fault? Suggestions gratefully received! :)

    I don't have a breadmaker but I have made a lot of bread lol (I used to be a baker) and to me that looks possibly like your loaf has overprooved and collapsed. Is there a way of checking the temperature on the breadmaker, to make sure that it's not getting too hot too quickly? Or it could be the opposite, and it's not prooving enough ... Or, did the flour you buy have added sugar? Sometimes too much sugar makes the yeast go mad and you get a loaf that prooves too quickly, and then collapses.

    The only other thing I can suggest is that it also looks like the dough at the top of the loaf hasn't been mixed properly ... is there any way you can take the dough out when it's done, give it a knead yourself and then put it back in the BM to bake?

    There's nothing on the flour packet about added sugar so I don't think that's it. It does appear to be evenly mixed. It seems to be pretty much consistent texture throughout, just the top that is knobbly and sunken. If it was overproving, would the whole thing be so dense?

    Possibly ... When I was working in the bakery we occasionally had wholemeal (rolls especially) that would overprove and they'd be like bullets - tough and really dense, like chewing on a flannel lol. I think though that it does depend a lot on the flour, and it might just be a case of trying a few brands to see what works best for you. Wholemeal especially can be really temperamental. We used to get our flour from Rank Hovis and the wholemeal we got from there was great, but when they stopped supplying small bakeries we had to get another brand from our supplier and it's *never* been as good.

    I had a horrible time at first when I got my Panny trying to slice the loaves! I was using breadmixes and they make a large/extra large loaf which is much taller than a 'normal' loaf. What I do now when I use the breadmaker is to use my own ingredients so that I can make a loaf on the "medium" setting (sometimes large) which turns out more like a 400g size shop bought loaf. MUCH easier to slice, especially if you let it cool down a few hours.

    I use a regular bread knife (long blade and very stiff), but do have to say that my first bread knife's blade was way too thin and 'bendable' - not so great for even slicing!

    Also I've started using milk with an egg mixed in for half of my liquid, gives a lovely flavour and firms up the bread a bit too. :D

    Must be an updated version.

    One that purchases the ingredients, brings them home, puts them away, loads the machine, sets the controls, removes the loaf, cleans the pan and then puts it away again.

    Can any one help please. I can't find the recipe book that came with my Panny and have a mad craving for the spiced bun loaf. Could anyone help with the ingredients, amounts etc please.

    You can get the original manual with all the recipes as a PDF file from the Panasonic website here.

    I had a bit of a tidy up around my kitchen , you know throwing aways bits of stuff that I thought I no longer needed....well:rolleyes: , I'm convinced I must have thrown the receipe book out for my panny cos I cant find it anywhere!:eek:

    So could someone type me out the ingrediants for the M size loaf, on a 4 hour bake programme...:A

    ..or better still, is there somewhere online I can print it all out??
