    I had this problem a couple of months ago - I changed the flour I was using (apparently the wheat can have different gluten levels depending on the weather) and also now I put warm water rather than cold in. I haven't had a problem since.

    I've had a few disasters with my loaves too but now seem to have cracked it with this recipe,

    Yeast 1 tsp -- put in bread pan 1st then followed by:
    Strong white flour 500g (1lb 2oz) I use Tesco own brand
    Sugar 1 tbsp
    Butter 25g (1oz) I use Stork soft
    Salt 1tsp
    Warm water 350ml (12fl oz)

    I use the basic bake white loaf setting, large loaf with medium crust.

    We had what sounds like a very similar problem: all of a sudden the loaves started coming out flat and very dense. I don't think that its caused by not following the recepie...this happened back when I followed the book every time, I never do any more and my loaves have never been better. Its much more likely that the yeast is the problem.

    We bought some new yeast and the issue went away, tho the yeast did bubble up in warm water it wasn't as lively as it should have been so I'm guessing it had deteriorated too much to be able to rise the bread. I now simply use yeast, flour, a touch of sugar and salt (but not as much as the book says) and water and get even better results than if I follow the book!

    If you are doing a quick loaf version at this time of year your need to add lukewarm not cold water.

    Hi, I don't want to sound accusing, but did your OH also make the successful loaves? I only ask because my OH's loaves always have something wrong with them, I really don't know what he does wrong. But every loaf I've made has been fine (we're probably talking 100 loaves by now).

    Have you opened the lid to have a peak when it's finished 'kneading' to see if it looks like the paddle has worked?

    I would try the suggestions from Bertiebots.

    I'd second that, my BM works fine when I do them but when DH touches it - forget it.

    Anyway, I've found joy in making bread by hand. Slightly time-consuming, but just SO therapeutic :A

    I will second that...and it keeps them old bingo wings at bay if you make as much as I do LOL:rotfl: !!! Hope you figure out what the problem is.

    Well I am still enjoying my SD 255. I have not bought any bread/pizza products since having it at the beginning of February so really pleased, I was worried it would be a fad but no, it is definitely hear to stay.

    I have also managed to get a spare paddle for it as well. After only having it for a week I noticed that a bit of the non stick had come off of the paddle blade. As I had only had it for 1 week I called Panasonic who kindly put another in the post for me, so now I have a spare if I need it.

    I have found the best bread roll recipe to use if you want really soft rolls, is the dough mixture for the apple braid on the 'feeding a family of 5 from the store cupboard thread' I just halve the sugar amount for rolls.

    Bless you Sophie'sMum! My lot thought I was mad when I asked if they would club together to get me a BM for Ma Day/Easter:p

    I haven't actually got it yet tho.....I've been told to get the one I want & they will pay for it, cuz I kept going on about the SD254 so much. Then Mrs Mc over on the Groc Challenge kept saying how easy it is to make bread by hand & now I'm confused:confused:

    I like the idea of leaving a machine to do it all for me, but--as another poster said--it's an expensive ornament if it turns out to be a fad.

    Oh blow it! I'll go get one this week-end....I think......yep....definately maybe:o

    I too succumbed to the Panny club about 3 weeks ago and have loved every loaf so far!
    I made the Brioche loaf at the weekend and it was delicious.
    Only disaster I've had is forgetting to press the 'Start' button!!! Tragedy no fresh bread for breakfast!
    I haven't bought any bread since getting the Panny and even my 16yr old 'Kevin' of a son (you know the knuckle-dragging type) as evolved from his grunting stage to even making a couple of loaves - it's amazing but true, we are bonding over our Panny - it is our only topic of conversation that goes beyond a grunt, bless him!
