I have just realised I only have 6kg of mixed dried fruit... phew! And the mincemeat has hardly made a dent in it... any other ideas?
I don't think I can make a Christmas cake (even if I liked it) as I am going away for nearly a month and wouldn't be around to feed it.Man plans and God laughs...Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.0 -

Guinness Cake?
The mixed fruit and some sugar get soaked in a can of Guinness overnight before adding to the other ingredients (I actually prefer to use a can of Murphy's as it doesn't taste as bitter). It makes a massive, dense loaf which keeps well and is great sliced and spread with butter.Over futile odds

You dont have to feed a Christmas cake, just wrap it and put it in an airtight tin and it will be fine.make the most of it, we are only here for the weekend.

This probably should be easy but I really do have no creativity.
Whilst clearing up today I've found an unopened pack of dried figs and an unopened pack of dried fruit/nuts (including stuff like dried bananas and coconut).
I seriously doubt they'll get eaten as snacks and if I go for putting them on my porridge then I'll be here till this time next year there's so much of it.
So, anyone any ideas? A month ago I would just have chucked them but I'm much more determined.:j
BTW, for anyone who has followed my story since the beginning about my incredibly fussy dd, I'm pleased to report that we seem to have turned a corner since I joined the MSE/OS boards. She has half the usual portions on her plates and will now eat most of what is given to her. There are so far 6 items on her list of do-not-likes. So, thankyou to everyone who offered suggestions and advice.

What about a Fig cake?
Ingredients:
100g/4oz Dried Figs, roughly chopped
480ml/16fl.oz. Milk
75g/3oz Butter, cut into small pieces
425g/15oz Self Raising Flour
100g/4oz Sugar
120ml/4fl.oz. Dark Rum
2 Egg Whites, stiffly beaten
Instructions
1. Preheat the oven to 180C, 350F, Gas mark 4 and grease and line a shallow 25cm/10inch square cake tin with greaseproof paper.
2. Heat the milk in a pan to almost boiling point then remove from the heat and add the butter. Once the butter melts, gradually stir in the flour then add the sugar, rum and figs.
3. Fold in the egg whites then pour the mixture into the prepared tin. Bake in the oven for 50 minutes. Turn onto a wire rack to cool.0 -
