Hi
Well you can't have a best mince pie pastry ever threat without the mince to go in it lol
500g currants
500g raisins
500g sultanas
juice and rind of 1 orange and 1 lemon
1 packet of veggie suet
500g sugar
1tsp mixed spice
750g cooking apples grated
(you could also add flaked almond to this if you like 2oz)
For the alcohol I use vodka lol (Im not an alcoholic honestly) or you could use whisky, brandy, rum, sherry etc...put as much alcohol as the fruit will take, I usually add about 6 tablespoons on the first day and then keep adding 1 tablespoon for 5 days, this keeps well in the fridge and you can freeze it.
Requires no pre-cooking

Wow thanks for this, Thats great do you just mix it all together with a big spoon or do you need to use a blender? What size packet of suet please? do I just chop this and mix in also?Ladymac0

Hi
throw it in a bowl and mix it all together, put in sterilised jars, or freeze in plastic tubs, will keep in a tupperware container in the fridge for a week at least with the alcohol in it. The suet is shredded or grated lik ethis one
its called atora light and comes in a 250g pack probably need 500g for recipe
