    I made about 8 or 9 'normal sized' jars...hope that makes sense :o the 1.3kg is the weight after peeling etc (which takes forever btw:)) and I used a couple of bramley apples plus a load from a friend's tree so no idea what they were. as you can probably gather my attitude to cooking is a bit "lets try that and see if it works"! usu gets good results but has been known to go horribly wrong :D

    I wanted to know why suet is needed for fruit mixture and surprised to find mincemeat containing meat can last up to TEN years :eek:

    I have made my own mincemeat this year and its currentlty in the fridge.

    Can I put it in a jar in the cupboard of does it need to be refrigerated?

    It has veg suet and whiskey in it along with all the dried fruits.

    Any advice woule be great!

    I've kept mine in the fridge, in a big kilner jar (sterilised first). I made it for Christmas 2008 and what's left is still fine, mind you it had whitworths rum soaked dried fruit, cider, gingerwine and brandy in it so I don't think it dare go off. I did warn guests that were driving, how much alcohol was in it! I guess you wouldn't need to keep it in the fridge if you're going to use it up this year, just keep it in a cool cupboard like under the stairs or something.

    I think it depends on the recipe really. If you've cooked it, it should be fine in sterilised jars. If it is a raw mix, it depends how much sugar and alcohol there is, but even so, it should keep till Christmas - may just be more alcoholic than you expected, as the natural yeast on the fruit ferments with the sugar. Doesn't it say how to store in your recipe?

  • I didnt follow a recipe as such............... I just made it myself with fruit, whiskey suet andbrown sugar with some cinamon and nutmeg then sealed it in a jar to do its thing!
    Its in a cool dark cupboard at the moment
  • I would keep it in the fridge, but it ought to keep ok in the cool dark cupboard too, given those ingredients. Taste a bit. If it fizzes, you've stored it wrong....

  • I've always used Delia's recipe, stored in jars in a dark cupboard and sometimes have found a jar lurking at the back of the Cupboard that has been there for over a year and it's still been great. I think the alcohol preserves it but never had a problem with it going off. Making my new batch today for this Xmas.;)
