Help please with dried fruit and nuts

    The Easy Fruit Cake recipe from the Be-ro website is a really good one.

    Then click on 'List of all recipes' on the right hand side - then look down the list for 'Easy Fruit Cake'. Lots of other good stuff on there too:D.

    I substitute tea for water when boiling the fruit for that recipe - it gives a good colour to the finished cake - the fruit really plumps up and becomes juicier. Just make sure that you allow plenty of time for the fruit etc to cool down before adding the egg (you don't want scrambled egg in your cake mix :rolleyes:!).

    I only ever buy SmartPrice dried mixed fruit/sultanas - once it's been soaked you'd never know the difference ;).

    Could add a 'bit of booze' in place of some of the tea/water in that Easy Fruit Cake recipe :D - hic! PLUS it uses Self-Raising flour!!

    Did you put some orange zest in the cake? Take the zest off and squeeze the juice of an orange to put in the cake

    Drink the Gran Marnier? Save for emergencies? Use in a trifle? Use to take sticky labels off? Wait until next Xmas and set the pudding on fire with it. It will keep for ever
    the recipe ive got, is the lady who made my wedding cake 12 yrs ago. and her recipe asks for 2 teaspoons of orange rind and 3 tablespoons of orange juice. i not tried her recipe yet, as only got yesterday.
    oh good news on the gran marnier then lol. i will set sommin alight with it:rolleyes: lol....i was gonna buy some baileys as i think theres a cocktail made from them both (name slips me).

    I've made a boiled fruit cake with value fruit. Put 1lb dried mixed fruit in a saucepan with 1/4lb block marg, 1 cup sugar and one cup flour. Simmer for 5 minutes.

    Leave to cool overnight then add 1 egg and 2 cups SR flour. divide between 2 greased and lined 1 lb loaf tins and bake for about 1 1/2hrs at gas mark 3.

    It doesn't matter what size cup you use as long as you use the same size one throughout the recipe.I use a small mug but my grandmother used a large teacup.

  • And if you really do not want to use it, the birds love it formed into a cake with melted fat. When Im getting low on fruit I do this with whats left. I only use value stuff though.

    Could I use them in flapjack?

    or use the nuts for a nutloaf type thing?

    i was in co-op yesterday and managed to pick up some yellow stickered whitworths premium fruit mix. however, when i look on their website for recipes i cant see anything i want to make with them - simnel cake (its obviously not easter) cheesecake thats too heavy on ingredients etc. does anyone use this product and if so can you give me some pointers so i can use it to possibly adapt a recipe. i'm not sure i can just swap raisins for it.

    since it has cranberries & apple in it as well as the raisins etc, you could make some Christmassy cookies/cakes/hobnobs with them along with seasonal spices such as cinnamon and cloves.
  • Hobnobs would be lovely. I also make cup cakes with mixed fruit in them - just my normal sponge cake recipe with added fruit.
