Thanks hex2 , that recipe would be great for my gluten free friends. It could also be used for one of those in a jar presents, put coconut and sugar in a jar, recipe on the side, all they need to do is add an egg. Fantastic thanksSew it, knit it, glue it, reuse it , don't buy it0

Coconut haystacks
1 packet desiccated coconut
1 teacup sugar
1 egg
Mix together.
Have a bowl of water by you and an egg cup, also a lightly greased baking tray.
Dip egg cup into water to dampen so that coconut mix doesn`t stick, pack in enough mix to come to the top, level off then tap sharply on to the baking tray. Repeat until mix is used up.
Bake in a moderate oven about 180 until golden.
Enjoy, I love `em.
E.T.A. This recipe is from the 1960`s so not sure about packet size. Also I use a bit less than a full cup of sugar but that`s my personal taste.Fully paid up member of S.A.B.L.E.
