My recipe for coconut macaroons is dead easy but needs a very hot oven for a short time 350 degrees for 8 mins
I used 4oz coconut, 4oz condensed milk,1tsp vanilla extract, mix it all together. Put spoonfuls on well greased baking sheet. cook 8mins 350 degrees, allow to cool slightly and moove onto cooling rack. I use half the quantities and make them as sweets0 -

Could I just say that we used to make these at the bakery I used to work at and we used rice paper to line the trays because they really are notorious for sticking

just made these and they are soooo not delish at all so i best not give them to the brats :rolleyes:i better just put them to one side til i rememer to put them in the bin

easy egg based one for the lazy amongst us (that'll be me then...)
1 egg
3oz sugar
5oz dessicated coconut
Beat together medium sized egg and sugar until mix is light and fluffy. Stir in dessicated coconut and mix well. Line tray with baking parchment and spoon heaped tablespoons onto the tray spacing them a little apart. Bake in pre heated oven 180/GM4 for 10-12 minutes or till lightly golden. Cool on trays. Makes 12.

I've tried 4 times to make them and the milk always ends up coming away from the coconut leaving a pool of boiled milk and a pile of dried coconut
It sounds like you're using evaporated (thin, can be poured) rather than condensed (thick, gloopy, can be spread on sandwiches) milk.:happylove0 -
