  • Oh - I was about to rush and make Penny's recipe as they look so yummy- but they have milk in them. Never mind - off to find a recipe with egg white instead. Will try the chocolate on the bottom though.

I think that if I make those, OH will bite my hand off to get at them. They look fabulous and he can't resist anything at all with coconut in!

There's other 'coconut stuff' on that site as well - all look yummy
  • My type of recipe Penny:D When they say shredded coconut we are talking plain old dessicated aren't we, or did you use the sweetened *plumper* version? CM x

  • Well maybe it's not that plump:rotfl: But it is sweetened and moister;) Thanks for speedy reply:D :T

  • Oooh, just to say, they're really sticky so I'd advise using magic liner or rice paper - the first lot stuck to the greaseproof paper and it doesn't add to the flavour :rotfl: :o

I've tried 4 times to make them and the milk always ends up coming away from the coconut leaving a pool of boiled milk and a pile of dried coconut :(
One day I might be more organised...........

Not tried them myself but is your oven hot enough when they go in? Think the outside needs to crisp pretty quick to avoid that happeniong. Make sure the banking sheet is warmed too.
