For chicken pie I would make it with half stock and half milk and add some chopped parsley. We had this last night, adapted from one of the recipes I found on here.
I made a mushroom sauce, I put some butter in the pot, added the finely chopped mushrooms, let the cook a little bit, then added some milk, quite a lot of milk, let that heat up, and then thickened with cornflour mixed with cold milk. Cooked that through, then poured it over a casserole prepared with chopped cold cooked chicken and some cold cooked bacon. Then I wanted to put a pastry crust on, but the pastry went way wrong, so I topped it with a mixture of grated cheese combined with breadcrumbs, bunged it in the oven, 180 for 30mins, put some more grated cheese on top and stuck it under the grill to go really brown and crispy. We had it with small new potatoes, broccoli and sweetcorn. They said it was the best meal they've had all week, but that's maybe because it was different form what I usually do, but I would definitely do it again.Official DFW Nerd Club - Member # 593 - Proud To Be Dealing With My Debts!0 -
I've been trying to cook everything from scratch and tonight I'm making a lasagne, only problem is, I don't know how to make the white cheese sauce! All the recipes I can find online seem to want me to add a handful of different spices and herbs which seems a bit weird to me.

1. Melt the butter in a saucepan.
2. Stir in the flour and cook for 1-2 minutes.
3. Take the pan off the heat and gradually stir in the milk to get a smooth sauce. Return to the heat and, stirring all the time, bring to the boil.
4. Simmer gently for 8-10 minutes and season with salt and white pepper.

I've always used cornflour instead of plain flour and it's much nicer.0

i make mine in micro too
put a dessert spoon off butter (or marge) into dish ,put in micro till dissolved then add cornflour, mix for 1 min then add 3 quarters of pint of milk roughly keep mixing then when slightly thicker add grated cheese to taste.0
