Hi there
2oz butter/marge melt in a pan
add 2oz flour and mix well and cook briefly
slowly add 1pt warmed milk....slide the pan off the heat when you add the milk...mix in and return to heat briefly..and repeat until all milk is added..i also add a dollop of english mustard and seasoning...
Dont panic if it starts to go lumpy, just keep on stirring-on the heat and the lumps will disappear... cook it on a low heat as it will get rid of the starchy taste..if you try to do it too quickly it will thicken but still taste floury...-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

I always use Delia's all in one method linked in the first thread above. If you use cold milk it works every time and is really quick and easy.0 -
I put cold milk, butter, flour, salt and pepper into a pot and KEEP STIRRING it - don't move from the cooker. Works every time.0

To give the white sauce a bit more oomph, add a couple of pepper corns, a bay leaf and a skinned onion to the milk as you heat it. Then strain before adding it to the roux (the flour/butter mix). The roux should be equal weights of butter and flour BTW.
If using it directly rather than putting it in a lasagne or something, make sure you simmer it for 10 minutes to cook the flour. Raw flour is disgusting!0 -
I'm another Delia fan - the 'all-in-one' method with cold milk is the only way I've ever managed to make white sauce. This way works for me every time.0

Thank you all so much, lasagne was lovely and we had my friends little boy over and he had seconds, which was supposed to be for dh's lunch today..lol.
He loved it and asked me what it cost and asked his mum to buy him some like mine.

If I have cornflour in the cupboard, I always use that for white sauce as it makes fewer lumps:DAll Art is the transfiguration of the commonplace
