  • I bought some Lamb Mince at te weekend, and wasn't sure of what to do with it, my OH suggested meatballs which I reallt fancy making but am a bit unsure of how to do it, especially as my 5 yr old wants to help me make tonights dinner.

    I have
    the mince
    breadcrumbs
    eggs
    mixed herbs

    just wasn't sure if I need anything else or maybe someone has a recipe that I can use.

    I make kofta meatballs with lamb mince.

    I use one packet of lamb mince - I think it's about 400-500g from memory
    1 tsp cumin
    2 tsp corriander
    pinch of cayenne
    2 cloves minced garlic

    Mix all together then make into meatball shape. I then put onto oiled oven tray (I use one with holes to drain off the excess fat) and cook until done in the oven. They're very nice with hummus.

    When I made pork meatballs I used the same ingredients you have listed except for the meat type. I just put a bit of this, some of that and they turned out lush!!

    You little one will love it, well mine loved helping and they must have been good 2 year old had seconds.
  • Hi all,

    I've got 250G of minced beef, and I fancy trying a spaghetti with meatballs in a sauce type dish for tea tomorrow evening, and was wondering if anyone could recomend any quick and simple recipes for making meatballs, and sauce to serve with spaghetti.

    I'll have about an hour at the most to prepare and cook all this, as we also have to go out.

    If anyone can recomend anything I'd be really grateful (I have checked the index, but that didn't turn up anything).

    I'd prefer making my own sauce, but am prepared to use a jar if necessary.

    I posted this yesterday in answer to someone's question about what to do with pork mince. You can do the same with your beef, no problem.

    Mix the pork mince with some fresh breadcrumbs (just whizz 2 or 3 slices of bread in a food processor if you have one, otherwise you'll need to grate some stale bread) and a small cup of milk. Add some herbs (dried or fresh), salt & pepper, and form into meatballs about the size of a cherry tomato. Fry gently in oil until brown and serve with a tomato sauce (made with tinned tomatoes, herbs, fried onion, garlic, peppers, mushrooms, whatever..) and a pile of buttered spaghetti or noodles. Yummo!

  • I actually use 1/2 onion whizzed up fine in a blender with one egg, a few tablespoons of matza meal (get it in kosher/ jewish section of supermarket, its a bit like breadcrumbs but drier), some salt and pepper to one pound of mincemeat.

    I then make a tomato sauce out of fried onion and garlic, couple of cans of tinned toms, some tom puree for richness and a little bit of dried chilli. I then add little meatballs (smaller than a golf ball, about the diameter of a 10p piece) cover them in sauce and simmer slowly for about half an hour.

    mornin:D i make meatballs quite often as my oh is addicted to them :rolleyes: i use any mince i can get my hands on i bought a stack of reduced pork mince a while back and am still working my way through it. what i do is fry an onion gently and throw it in a mixing bowl with the mince and half a pack of cheapo stuffing mix add an egg to bind, mush it all up into ickle balls and fry! and they really are to die for, veryyy tasty. for the sauce fry garlic + onions add a tin of toms/tom puree if needed and maybe mixed herbs and let it bubble away till you get a nice sauce from it. cook some pasta and you are away!

  • Ive just been reading the opeing page of old style this morning and everyone seams to be enjoying meatballs at the moment so I thought id have a go myself. Alls well so far apart from I havent a clue how to make the tomato sauce to serve them with.
    Can anyone please give me a step by spep guide including rought times etc?

    Onion, tinned tomatos, herbs.

    Finely chop the onion and sweat in a little oil until soft add tomatos and herbs. Your choice really mixed herbs.

    You can build on this and maybe add chopped bacon. (same time as onions)
    You could add garlic.
    You could add worcester sauce to spice it up a little.

    Just tweak to suit your taste.

    Ooh I just made meatballs last week with sauce and spaghetti :)

    My sauce was quite simple - 1 tin chopped toms, 1 box passata,reduced down slightly for 7 - 10 mins, add some onions browned&softened in olive oil, a big pinch of oregano (dry or fresh) and plenty of black pepper.

    Pour over the meatballs/pasta and add a good sprinkling of grated cheese.

    If you want the sauce to be a bit deeper in colour and taste crumble in a beef oxo cube :)
