Meatballs (and sauces)

    I just whizz some mince in the processor with salt, pepper, onion and a bit of parsley.
    The processor makes it go quite mushy so easy to form into balls. I then roll into a bit of flour and brown in the frying pan before adding to tomato sauce to cook.

    My kids hate the texture when I do this! It's personal taste though so try it both ways and see which they prefer.

    Last week I bought some BOGOF Swedish meatballs, as DH loves the Ikea ones. I'm not that keen on bought meatballs, but they were a bargain and I knew he'd be happy! :p I served them with a tomato, onion and pepper sauce. I loved it, but he didn't (too tomatoey). He also said the meatballs weren't up to the standard of the Ikea ones.

    Does anyone have a recipe for a meatball sauce which is anything like the Ikea one? (Extra points for genuine Swedish recipes! :rotfl: )

    In the pan that you have fried your meatballs you add 1/2 cup cream with 1 cup beef stock (from a cube), a bit of soy sauce (about 2 teaspoons) and about 1 teaspoon of flour. Mix it all together and bring to a boil - strain it for lumps and let thicken.
    That is for the creamy sauce they used to do but last time I was in there it was a red coloured sauce (cranberry?)

    It was Lingonberry sauce not cranberry
  • Add a tin of oxtail soup and simmer on a low heat for a LONG time until reduced to a think sauce, mmmmmm

  • You can also buy the actual sauce at Ikea if there is one near you? Love their meatballs and sauce - never have the lingonberry stuff though - too sweet for a savoury dish!

    Not a fan of the lingonberry sauce myself (I don't do the whole meat and fruit thing?!:confused:) but have, in the past, served up a mixture of raspberry/strawberry jam mixed with cranberry sauce, which went down very well with those who are partial to the Lingonberry concoction that IKEA serve (have to admit I served it whilst holding my breath because I didn't think they'd fall for it...;) but when served in a separate bowl in the middle of the table - i.e. looking like a rather posh condiment...:rolleyes: - it went down a treat :p ?!).

  • Thank you all. We've had a 'full and frank discussion' :rotfl: about these meatballs this morning. Apparently when he said 'the sauce (my sauce) was the best thing about the meal' he meant it - I thought he was just being rude about the meatballs :o

    Sadly, I can't use most of the recipes above as I am allergic to soy and MSG (oxtail soup is normally LOADED with the latter). Good tips about the jammy things though - thank you! :D

    Make your own meatballs as well then!

    Dead easy. Chuck some mince in a bowl, a finely chopped onion. Selection of herbs, garlic etc to your taste. An egg to bind (some people don't bother with this, but I do). Some breadcrumbs to give texture and bulk. Then, mix it all together, get your hands in and squash lots of meatballs out of it.

    Tastes MUCH better than the premade ones, and you know whats gone in them as well.
