    I use a bit of bulgar wheat in with mince lamb for patties and kofta - like using breadcrumbs but with a nuttier taste

    I always add breadcrumbs and an egg to meatballs, and sometimes a little onion finely chopped.

    I've had a bag of Bulgar there for ages, i never thought of adding it to mince i generally add red lentils.

    Meatballs with Lentils

    Ingredients:

    2 T. butter
    1 pound ground Goat or Lamb meat
    2 cloves
    3 medium tomatoes diced
    2 T garam masala*
    1 cup red lentils, washed
    1 1/2 t. chili powder
    2 cups hot water
    1/2 t. turmeric
    Salt to taste
    1/2 t. ginger, chopped (Paprika garnish)
    1 t. garlic, crushed and diced 1 inch cinnamon stick (optional)
    2 cups fresh cilantro (corriander), chopped
    1 medium onion, diced
    To prepare:

    In hot saucepan add all the whole spices. Stir continuously for 2 minutes. Add butter chopped onions and garlic. When onions turn light brown add ginger. And half of all ground spices. Stir then add red lentils and 1/2 cup cilantro. Add 2 cups of hot water and simmer.
    In separate bowl, mix ground meat, 1 cup chopped cilantro and the rest of the ground spices. Form 1 inch meatballs and place in the simmering mixture. Cook for 10 minutes. Add the tomatoes then cook for an additional 10 minutes. Remove meatballs from mixture. Boil to reduce liquid for 10 minutes. During this time add butter to a frying pan and thoroughly brown meat balls then sprinkle with paprika.

    Meadows, I could never in a million years do that, halfway through I'd get bored and go and eat chocolate instead. And even if I did - the RV wouldnt eat it! I think we're a lost cause !
