Hi Lucy,
I've never had waitrose meatballs so can't help with that, but you'll find lots of meatball recipes on these threads:

HM Ikea style Swedish Meatballs?
I'll add your thread to the first link later to keep the recipes together.

We eat a lot of Costco lamb mince, and I like to do it in the Remoska in meatballs. We seem to eat half a sheep at a time and I'm sure there will be ways I can stretch this to go further. I can do it with ordinary mince & tatties etc - but what can I add to the meatballs that will cook in nicely ?0

I wrote about this elsewhere recently, so a copy paste:
This is how I extend a meat mix. It's suitable for meatballs, sausage rolls or meatloaf.
400g mince (can be beef or lamb, should have a bit of fat to it)
1 carrot
1 zucchini/courgette
1 onion
1 egg
1 tablespoon tomato paste
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon cardamon
breadcrumbs (plenty!)
Puree the carrot, zucchini, onion, egg, tomato paste and spices. I also used a stalk of broccoli I had left over. Feel free to add in other veg lurking in the fridge - capsicum, cauliflower etc. Then mix this slush with the mince by hand until it's well combined. Start adding breadcrumbs, smooshing them in by hand, until you end up with a wet dough-like consistency. This is your meat mix.
Because you puree the veg, and mix it all in really well, most people don't realise they're in there at all. The spice mix makes it taste meaty, not spicy IYSWIM.Softstuff- Officially better than 0070 -
I have no idea about Remoska cooking but you could always add breadcrumbs to bulk up meatballs; or for something healthier what about adding grated courgette? I did this before to use one up in lamb burgers and it actually worked really well (and no one seemed to notice!)0

I normally add breadcrumbs, an egg and finely chopped onion to meatballs (and to burgers as well). I usually fry them or add them to stew.Unofficial Debt Free Wannabee.

I make German meatballs all the time, to 500g mince I add 2 slices of bread soaked in water, an onion and an egg to mine. I find it will make more meatballs... not sure how much more... and I have added 3 slices before without anyone noticing! We spend money we don't have, on things that we don't need, to impress people we don't like.
