Meatballs (and sauces)

Like most of my 'recipes', there's no real recipe as it's an attempt to recreate something I ate at a restaurant (which has now changed hands, sadly
). It's basically (for two large portions) - roughly chop a large onion and half to one aubergine (the amount depends on the size of the aubergine, and yes you can use courgettes as well - I have done a mixture of both before and it still tastes good) and fry in a splash of oil until starting to go golden. Add the meatballs and brown on all sides, then add some finely chopped garlic and some Moroccan spice mix (I use this one, but I'm sure other makes would work as well, or you could make your own if you've got the necessary spices) and cook for 30 seconds or so. Add a tin of tomatoes and some seasoning, stir everything together and leave to simmer for about 20 minutes or until the meatballs are cooked through. Sprinkle with some chopped coriander if you like it (and if you've got any, of course!).

Thanks, I will give this a go. I actually bought some spicy spice mix in Morroco when on holiday there in June and haven't tried it yet, brilliant time to give it a go!!

You could cook them in the oven and serve with new potatoes, gravy and green veg0

Cook the meatballs then drop them into some minestrone soup that has been spiced up with cumin, tumirec and chilli, gives the dish a Mexican flavour0

I bake mine in the oven using Delia's meatball sauce recipe then have them with chips and corn on the cob

I mix minced beef with whizzed onion and breadcrumbs and a beaten egg. Shape into small balls and coat in flour. I just brown them in the frying pan and when cool, I bag and freeze in bags of 6. This means I only do this job a few times a year but always have them ready to cook. We have them cooked in tomato and chilli sauce on pasta shape smothered in grated mozarella which is then toasted under the grill. This is my fast food standby. Meatballs are also yummy with mash and home-made onion gravy.0

When hubby makes them, he does it in the food processor, rolls them into fairly smallish balls and puts the first dozen or so on a plate and microwaves them for a couple of minutes while he rolls some more. This way, they hold together when you put them in the sauce and it can get rid of any excess fat. Lovely with tomato and marscapone sauce, linguine and garlic bread!! Sadly he doesn't make them very often as it's rather time consuming.Over futile odds
