meatball and cous cous salad is lovely, cook and cool the meatballs.

thaw and then flatten them and serve with mini-buns for mini burgers, if you don't want to buy mini buns, cut rounds out of white sandwich bread, use the offcuts for bread-crumbs.

thread on skewers with mushrooms, peppers and onions, brush with oil, grill and serve in pitta bread with chilli sauce for a kebab style meal.

Meatball sub sandwiches with mustard mayonnaise, lettuce and tomato.

Meatball and bean soup, made with beef stock.

    Hi all,
I'm using up left overs and making lamb and feta meatballs in a sweet and sour sauce for tea, and I've just realised I've got no eggs in to help bind them.
Any suggestions what I can use instead to stop the meatballs falling apart while they cook?
    Thanks

    Salt according to Heston B.
Cant you just shape them and put them in the oven to cook aslong as you dont add too much ingredients other than the meat they should not fall apart.

I do them with mashed potatoes and gravy and veg for a change sometimes.
Or meatball pittas, cook them off and serve in pitta bread with lots of salad and any sauce you want.

  • What about thai meatballs? Coconut milk, ginger, chilli, and some thai curry paste, plus whatever veggies you have kicking around - tasty and warming!
  • Was gonna suggest the mince peas gravy champ/spuds combination too!! :)
