    Nigella has a great recipe where you shape the meatballs and cook them in the sauce.

    from memory, the sauce is made by sweating some grated onion and crushed garlic in olive oil then adding passatta and whole milk, oregano, salt sugar, pepper. It looks thin initially, but thickens as the meatballs cook in it.

    The meatballs are 1/2 beef and 1/2 pork mince (but I've done with one or the other) an egg, some breadcrumbs, seasoning and grated parmesan - they are best small - a heaped teaspoon per ball. shape and gently place in sauce and cook for 20 mins or so - resist temptation to stir for a while.

    I'be never fried them since using this recipe.

    can any one give me a basic recipe for meatballs as i have no idea how to make them and i know the kids will love them if i did make some up for dinner

  • I do a quick version of Jamie Olivers recipe:-
    Fry 1/2 an onion (finely chopped) and add in a teaspoon of wholegrain mustard and a teaspoon of lazy garlic.set aside and leave to cool.

    Meanwhile in a big bowl mix up your mince, 4 generous teaspoons of dried italian herbs, 1 egg yolk and 1 slice of bread whizzed up into breadcrumbs.
    Mix all this together, add in the onoin mix and shape into balls.

    Brown the meatballs in olive oil in a pan on the stove, (don't move them around too much as they will break up), remove from heat, pour in a jar of tomato sauce (I like Lloyd Grossmans Tom & basil) rip up some mozzerella over the lot, cover and stick it in the oven for 20-25 mins @ 200 degrees.

    I usually serve it on tagliatelle rather than spaghetti.

  • It's just garlic squished up in a jar - just use a garlic finely chopped or garlic puree if you have that, instead.

    Try this maybe: In a food processor, whizz one onion and a vegatable eg courgette then add 1 egg and a packet of mince (any type) whizz again and then form into shape - burger or ball and then fry them or grill if it's lamb. My kids don't notice the veg!

    ps aubergine puree is a great substitute for the egg and makes the meatballs really light

    Other things to use instead of breadcrumbs if you don't have any are couscous, porridge oats and bulgar wheat.

    hi all,
    ive never tried them before. gordon ramsay was cooking some on kitchen knightmares. are they like making burgers?? i dont want to make spicy just seasoned.
