A friend of mine who is a keen angler gave me 2 trout yesterday about 3lb in weight. I put 1 in the freezer and cooked the other 1 and that turned out fantastic! It was my first time to cook a whole trout. I had the information on how to cook it off videojug

I seasoned it with salt and pepper and rosemary and olive oil then wrapped it in parchment paper placed it in a preheated oven at 180d for 15 minutes each side when cooked as I unwrapped it the skin came off and the flesh just dropped of the bone it’s the best fish I think I have ever had. I only ate half and that was a little too much anyway my? Is can I freeze the remaining half today. Thanks

  • Did someone shout for me (Trout :D)

I've frozen cooked trout before and it's fine. I cooked a big one, ate half and turned the other half into fishcakes and froze. They were just lovely.

One thing about the parchment paper, I don't bother with that. My mum told me in her day she merely wrapped her fish in the newspaper it was purchased in (from the fishmonger, back in the day - remember, before shrinkwrap, supermarket trays, etc?). She would wrap it, sprinkle some water on the newspaper and bake in the oven. That's what I do.

Reminds me I've got a lovely rainbow and brown trout in the freezer outside:T

Hi all We had a joint of pork yesterday for dinner, it was huge and unfortunately we didnt cut in half before freezing.well there is still half a joint of roast pork left, can I refreeze it as it is .Many thanks uolypool:)
Paul Walker , in my dreams;)
  • Was it raw when you froze it and you then defrosted it and cooked it yourself? Then you can freeze the cooked pork.

If it was frozen cooked and just defrosted and reheated by you then it cant.

General rule of thumb for meat and fish and freezing - as long as the food has changed state (raw to cooked) it can be refrozen.
  • Food should only ever be frozen in the same state once, so if it was frozen when raw and then roasted it would be OK to freeze it. Then, if you made soup with it, it would be fine to freeze the soup.
