    You've been an amzing help! Didn't get too much chicken off the carcass (we must have been a bit geedy over the weekend!) so gonna use the little I did get in the soup tonight!

    Thanks so much for all your advice, It can be quite confusing to know what to keep & what to throw away, can't believe I threw away all that 'jelly' or glue-like stuff before.

    Not getting so much of that this time around for some reason but still looks good!

    Hi

    I've just made this lovely chicken soup receipe courtesy of weight watchers. I am rubbish with left over chicken from the sunday roast but encouraged by this forum I made the effort, saved the meat and I'm so glad I did.

    65 g roast chicken
    1/2 medium onion(s)
    40 g dried rice
    2 stick celery
    3 sprig parsley
    2 portion Chicken Cubes
    1 1/4 pint water

    chop all ingredients
    add to water and stock cube

    season with salt and black pepper

    simmer for about 20/30 minutes minutes
    blend and serve

    I didn't blend it and its really nice.:T

    I have made some chicken stock from the carcass and i would like to make chicken soup but i would like it chinese style. does anyone have a recipe? i have some noodles i would like to use and baby carrots plus chinese 5 spice.

    yesterday i was very giddy to be given 2 huge turkey wings from a local butcher:D well i have roasted, boiled and stripped them and am left with a huge pan of stock (with tonnes of meat in)
    i usually make thai hot and sour soup which i love but i have a freezer full.
    whats your fave chicken (?turkey) soup recipe, i have a fairly well stocked stock cupboard with herbs, spices and indian/thai and chinese stuff
    i need inspiration from the experts :D

    Good and old fashioned is my style
    Soak some soup mix (you know the kind with barley, peas, lentils etc in)
    chop up whatever root veg you have to hand (keep it really chunky, you'll see why in a mo)
    bung everything and an onion in the stock
    simmer for an hour or so, until everything is tender
    Hoik out the chunky veg and mash the bejabers out of it
    mix it back into the soup, reheat. Stand your spoon up in it and serve

    I'm afraid I never use a recipe for soup. I make stock from the bones left after roasting the chicken, either by putting it in the slow cooker overnight with boiling water to cover, or by doing it in the pressure cooker for about 45 minutes. Then, strain off the bones, salvaging any decent meat.

    Return the meat to the stock, add onion & any vegetables that I happen to have in the house! I always include some potatoes as they thicken the soup. If there are leftover cooked veg from the roast dinner (I mean ones left in the serving dishes, not scraped off someone's plate after dinner!) then they go in, too. Carrots always liven up the colour a bit. I taste it and add seasoning to taste (salt, of course, pepper, maybe worcester sauce, herbs or whatever seems to go with the veg that are in it)
    I know that sounds a bit hit & miss, but it does mean that soup is a real OS meal, using up what I have rather than having to go out and buy anything specially for it.
    I usually serve it with fresh bread from the BM, or what my DH calls "cooky rolls", those part-baked rolls you finish off in the oven for about 10 mins (35p or 39p from Aldi or Lidl) Sometimes I have made cheese scones to go with soup. Either way, it makes a filling meal which costs next to nothing.

    Hi there
    How about chicken n sweetcorn soup?
    throw the bones in a pan and cover with water
    bring to boil and simmer for about an hour,
    strain stock into a clean pan
    pull off any chicken bits and drop in stock (you may want to add any small leftover bits too)
    blitz a large tin of sweetcorn (including the liquid) until not quite smooth
    add this to the stock (looks a bit icky at this point:-)
    mix some cornflour with cold water and add to stock
    cook gently until as thick as you like
    season
    serve and add some chopped raw spring onions -great for using the greener ends!!!
    its lovely with plenty of soy sauce...but it will make it an odd colour....
    for more authentic chinese chicken and sweetcorn soup - add a beaten egg white at the same time as the cornflour...you get the stringy bits, but i find it doesnt make the flavour any better...
    this is soooo quick and cheap..and tastes stunning..
