I would take it out the night before you want to use it and defrost it in the fridge. If you froze it on the use by date, I would use it as soon as it's defrosted.

You can defrost it in the microwave or fill your sink with hot water and put the tub in with a weight on it. (I presume its vacuum packed and beef)

Take it out of the packaging and microwave on low or defrost for a minute at a time and till you can break it up. Leave it on the side for the moment and you may find you don't need the microwave. You can always do it later.

I have always just browned it as a big frozen lump, turning it over and over as bits defrost and brown. i am ultra-careful about food and often throw out rather than risk but I've never had any problems doing this with beef mince.

Usually defrost it for about 10 minutes in the microwave then turn into pan and brown it and break it up as we go.

Same here. I just keep turning the block over and "shaving" the defrosted layer off with a spatula. I haven't had any problems, either ... <thud>
