Ok, I'm going to make more later this week. I'd like to take out the hazelnuts, because I have a hankering for chocolate orange muffins.
Can someone tell me how to make them all nice and orangey please?
I've got this, if it's any help:If you lend someone a tenner and never see them again, it was probably worth it.0 -

Hi Mr BE
My choc orange muffin recipe uses real oranges...have you got any?
See recipe below......(YUM YUM)
225g / 8 oz plain flour
55g / 2 oz cocoa powder
3 tsp baking powder
115g / 4 oz sugar
1 egg
6 tbsp sunflower oil
7 fl oz milk
Zest and juice of 1 orange
100 - 115g / 4 oz chocolate drops/choc chips
Preheat oven to Gas Mark 6 / 200 degrees C
Sift the flour, cocoa and baking powder into a large bowl. Add the remaining ingredients and mix to a batter. (Don't over-mix the batter - it spoils the muffins)
Pour into muffin cases.
Bake for 15-18 minutes.
Makes about 12 muffins
If you haven't any real oranges then I suggest just a few drops of your orange essence....but go VERY easy with it
cheers

Hi there Mr BE!
I haven't been on here for a while - have to catch up with yr exploits! Loved yr other threads and choc yog cake recipe is fab too!
Think the orange liqueur may be wasted in muffins - best keep it for a choc orange mousse - or choc orange hazelnut mousse! (use nutella and double cream - fab)
Just remember with muffins, DON'T OVERMIX!
Also if you use baking powder with SR flour get bigger and better muffins.0 -
Sorry to have missed this thread while it was live.
A quick question.
DH can't eat brown chocolate. I have a theory that vanilla muffin mix might be rather good with M & S white chocolate raisins sprinkled through and on it. What do people think? Will it work?
I've been meaning to try this for weeks now, so if anyone wants to pilot it before I get to doing it, you are very welcome.....:rotfl:Ex board guide. Signature now changed (if you know, you know).0 -

Errr...that's not essence, its a 40% proof orange liqueur from www.jos-nusbaumer.comI visited their distillery in Steige over Christmas. :j:beer: It was a freebie and I'm not quite sure what to do with it.*
*Apart from the bleedin' obvious. :rolleyes:If you lend someone a tenner and never see them again, it was probably worth it.0 -
