Freezing home made pizza and dough

    I've found a recipe on youtube for a naan bread which people tell me can be used for pizzas also. Two birds, one stone!

    Just for info. Last week I made a double batch of pizza dough in my breadmaker and froze half as an experiment to see how it would turn out. Today I defrosted it, shaped it, added sauce - also frozen home made - and topped with cheese before cooking. Worked just great and freezing a lump of dough was easier for me than prepping a base to freeze. Shaping and topping took less than 5 minutes so for me this was a good quick, cheap, after work meal and all home made.

  • I'm new to old style moneysaving but last night attempted to make homemade pizza's for the first time which was a real success! Have vowed never to buy takeaway ones again as they were nicer! But I have loads of the sauce and toppings left so I was wondering whether if I made another batch up today I could freeze them?? Just I don't want the salami, pepperoni etc to go to waste.

    If I can do I make them but not cook them then freeze them? Would I have to thoroughly defrost them before cooking them?

    Any tips would be appreciated :D:D

    Yes you can. Dough, Cheese, Pasata and Italian sausage can all be frozen - All of which defrost in no time at all so i wouldn't worry about having to use them frozen.

  • You can either make them up and freeze them or freeze portions of the toppings and lumps of dough, or uncooked bases if you have the space to flat freeze.

    Freezing pizza is not a problem, but when you take it out I would recommend cooking from frozen as you would a shop bought one!

    Yes, the dough should cook ok from frozen as long as it isn't too thick, because then it might just be a little soggy in the middle. If you are concerned, try part cooking the bases before you add the toppings, then freeze it all. (To stop it puffing up too much, pierce the dough with a fork all over after rolling it out.)

    Can I ask a question?

    Do you think it would work if I made pizza bases in the breadmaker, rolled them out onto pizza trays and then frozen them in the freezer? Could I then take a frozen base out of the freezer, put the toppings on & then cook it?

    yes. You could even put the toppings on and freeze ready to go into the oven :D
