    It will be fine to cook from frozen providing you make sure it's thoroughly heated through. There's an earlier thread with more advice:

    i have just made 2 huge, delicious pizzas but we have only eaten one of them.
    how long will the other one keep in the fridge (its not cooked yet) or am i able to freeze it on a baking sheet, wrapped in foil.
    do you think it would be ok to keep in the fridge and eat on sat or sun or is that totally minging of me?
    the remaining one is just 2 cheese and tomatoe at the minute, i havent got round to putting on the other topping.

  • I think you could safely eat it Saturday ! Most foods have "eat by" in 3 days also as long as it`s stored in a cold "working well fridge" cooked well and throughly you should be fine
  • We had this for tea tonight too! Personally, I would wrap it in cling film and freeze it uncooked. Just in case my plans change (which they often do) and we don't get round to eating it on the day. It will only take a few minutes longer to cook from frozen anyway!

    Hi vixtress,

    I agree with Downsizing and would be inclined to freeze it and cook in a moderate oven from frozen. I could be wrong, because I haven't tried it, but I think the toppings could make the base a bit soggy if it was kept in the fridge until Saturday.

    I agree with freezing raw and cooking from frozen - even in a cold fridge the yeast in the dough will still work, albeit slowly, so you could end up with a very puffy base with soggy toppings! As the one you ate was gorgeous you don't want to risk the second!

    i once worked in a pizza shp- bases came in frozenm we defrosted and tooped /cooked.. freezing 'raw' bases should be fine!
    Long time away from MSE, been dealing real life stuff..
    Sometimes seen lurking on the compers forum :-)

    I'm just about to go and do a batch of pizza bases. For the ones that we won't eat tonight, do we freeze the dough before it's risen, after it's risen or after it's cooked? And if I do freeze it after cooking can I reheat it from frozen or do I need to let it thaw first?

    Also, is there any advantage to making potato wedges and freezing them or is it just as quick to make them when needed? If okay to freeze, do I just cut potatoes, toss them in oil then freeze? Roughly how long would they take to cook from frozen?

    Thanks! I'm going into my 3rd trimester of pregnancy and looking for any time/energy saving ideas that'll stop 'anyone' accidentally ordering a takeaway!

    I roll out my pizza bases, part bake them, then freeze them. Either with or without the tomato sauce on them.

    With potato wedges, I par-boil them, mix them up in a bowl with oil and spices, then open freeze on a baking tray.
