Freezing home made pizza and dough

    I have found a wonderful homemade pizza on here which the kids and OH loved. I would now love to make some up and put them in the freezer so that on nights when I don't have a lot of time I can just pop one in the oven like a shop bought frozen pizza. Is it possible to do this and if so does anybody have any ideas how to store them so they don't end up all bashed before they freeze.

    I freeze my hm pizzas without cooking them and then heat them straight from the freezer. They usually turn out ok. (if they don't its usually cos i forgot to check them until I smelled them burning) If my freezer is too full for them to be laid on the shelves I freeze them on baking trays and then bag them up when solid.
    you can also freeze the bases on their own and then top the frozen discs and cook them that way.

    I get the BBC GoodFood mag and this month it had an article on freezing your own pizza, says to freeze on the tray wrapped in cling film, if you need the tray take it out once frozen, remove tray, and re-wrap in cling film then stack them. Most toppings should freeze fine, some veg may go a bit soggy. I'd cook meat first though.

    You can freeze the base, or freeze fully "dressed"

    I cook the base for a few minutes first. Make sure you !!!!! the base or it puffs up. Then i put toppings on and flat freeze. Coz the base is part cooked it is a lot more sturdy and easier to move around. I cook from frozen.

    Hi everyone.
    I am planning on making pizza from River cottage everyday this evening, and just made up the dry mix for the dough. THEN I read the amount of pizzas it would make :o 4-5 pizzas, each serving 1 generously! Hmm. There's only 2 of us, and I'm SUPPOSED to be on a diet :rotfl:

    So-I would like to freeze either pizzas, or the dough. What would be the best thing to do? Make up pizzas and open freeze without cooking, make them up, cook for 5-8 minutes until solid then freeze, or just freeze the excess dough in a wee ball to defrost and make pizza when we feel like it?

    I'd freeze the raw dough until you need it. I usually make enough dough for 3 to 4 pizzas at a time as my BM doesn't like small quantities, and freeze the excess in one-pizza portions - it freezes and defrosts just fine.

    I routinely freeze dough which has been proved/knocked back. I defrost it overnight, roll out with plenty flour (tends to be wetter) and let it sit in a warm room for a little while (longer if you prefer a doughier pizza).
    Ermutigung wirkt immer besser als Verurteilung.
    Encouragement always works better than judgement.

    I've done it both ways, freezing the dough and freezing the made up pizzas. I think I prefer to freeze the dough and make fresh toppings but it is very convenient to just pull the pizza from the freezer and whack it into the oven. It's down to personal choice really.
