basic bread recipe in breadmaker! help!!!

    :) You don't need to freeze them forever, btw, just 24hrs in the freezer is long enough to kill off any possible bug problem.

    I've been fascinated by sourdough bread for ages, but had convinced myself it couldn't be made it in a breadmaker so I'm definitely going to give your recipe a go. Two quick questions - which breadmaker do you have? (So I can compare programmes) and have you got an idiots' guide to making your starter (actually that probably isn't a quick question as I from everything I've read the seems to be the key to the whole thing!

    Ooh make that three questions: have you tried including rye flour?

    Starter is easy to make, I made mine many years ago and have forgotten how, I expect you will find it if you google. It is magic when the bubles start forming
    yes, I use rye sometimes as it makes a more sour dough
    I also used kefir whey, which worked well

    sourdouigh is very easy going and just needs flour and some water from time to time

    I am only making bread with sourdough these days and it is quick to assemble. I allow a good 10 - 11 hours from start to finish and it only requires pressing a button twice

    I used to make it in an oven with a heavy bakestone using a peel and banatons but the panasonic way is just as good, if not as pretty

    I buy shiptons organic in bulk and it goes straight into large lock and lock boxes, which are stored in an airy shed. Never had a bug problem with this method

    Been thinking about having a go at baking my own bread - is it worth buying a cheap 2nd hand breadmaker to do so though?

    Hi alamaya
    Do try this recipe, it's lovely:

    250ml liquid: I use about 2/3 water and 1/3 milk
    30ml extra virgin olive oil (or see below)
    175g well drained tinned chick peas
    500g strong white bread flour
    1.5 teaspoons salt
    2 teaspoons sugar
    1 sachet easy blend dried yeast

    My BM is the Kenwood Rapid-Bake (£5 in a charity shop last year, and now my absolute favourite kitchen helper ..) I use programme 2, which is the basic large white loaf. The loaf comes out very light, moist and with a slightly nutty flavour, and little dark specks. To make it a bit cheaper, I often use vegetable or sunflower oil instead of the olive oil, and I was lucky to get some cheap tins of chick peas when they were on offer.

    PS Just drain the chick peas, rinse them briefly and chuck them in - the breadmaker mashes them up.

    That's what I did, I got a Morphy Richards for a tenner from a charity stall last year. We used it for every loaf, though I have to say the MR needs a bit of recipe-tweaking and the results were never perfect. And the paddle gets stuck in the bottom. However, it was still much nicer than bought bread.
    Once I'd used it for 6 months I felt justified in buying a proper one - a Panasonic - when they were selling the old models off cheap earlier this year. As expected the results are far better than the MR, and the paddle hardly ever gets stuck. We make 100% wholemeal, 70 & 50%, all white, pizza dough, brioche loaves, all sorts:)
    Local area ebay often has them to pick up cheaply, and they do crop up on freecycle (where I gave away my cheapy).

    But still try to get a Panasonic if you can, although I gather the MR fastbake is quite good, the Panasonic and Kenwood are reckoned to be the best.

    Bought a cheapy Cookworks breadmaker today - £20 brand new.

    Made my first loaf using the basic recipe in the manual, substituting fresh milk for powdered. It's good! :D

    I made this the other day. I don't use a breadmaker so I whizzed up the chickpeas before putting them in. I didn't tell anyone that it was different from normal and nobody complained. It's a brilliant way of getting extra protein into people and is very tasty :T
