Cap this year: 27p → 24p → 26p - so not true they're going up, it's cheaper now then it was in January before the war.
Sure the next predictions are 5% up and then again 5% up, then down 2%, then down 8%.. but it's very unpredictable.
As you say if the war escalates it will go up more, if deescalates it will go down quicker - nobody knows what will happen.
And regarding fixes - they take all of this into consoderation - if the outlook on war inproves in 2-3 months time the fixes will be cheaper too.
I think what @tlcgrantham showed may be a good idea, combines protection from any price increase as well as helps you learn Agile like shifting so you can understand how it all works.

i did but its mainly for variables which will change shortly and 24 months fixes

are people fixing at the moment or rolling on a price cap variable?

Those fixes are your alternatives to a capped variable tariff.

The cap is expected to rise substantially in January, when most people have greatest need for heating:
And so we're generally fixing, to avoid any more price shocks.

You've missed the relatively cheap gas fixes that were available in July (when you started this thread). Pick the best one you can find from what's on offer now.
An 18-month fix will see you through two winters, and of prices plummet in 2027 you can pay the early exit fee to switch away.

But…
Octopus is currently 25.10p (for me) on tracker.
EDF quotes:
Green - 21.75p
Amber - 26.62p
Red - 43.71p
Not a huge amount different (cost wise) in the green and amber times to make potential red usage worth it?
Do EDF publish their previous saving sessions? Those might be the tipping point (although I have solar so not really that useful).
