Which Energy Supplier should i use?

There's no right or wrong answer. It depends what you want: lowest price, best customer service, the certainty of a fixed price for a year or two or the gamble of the Standard Variable Tariff. What's right for someone else may not be right for you and vice versa. You also need a good crystal ball.
Search a few Ofcom accredited comparison sites (make sure you search the whole of the market, the option is often well hidden) and see what you like. Also look at the Which? ratings and avoid the ones near the bottom.

What's so good about it? Second from bottom in the 'Which?' league…

Customers with smart meters often get cheaper hours/days/overnight electricity than standard tariffs, three price bands per 24 hours, choice of fixed or dynamic, both versions had free electricity last Saturday 9am-4pm as well as on other occasions.

For lower usage consumers EDF lower SC trial is available exclusively to customers on Freephase Smart Meter Tariff.
North West region has one of the lowest E SC, current Static/Fixed Freephase tariff version SC is a whisker away from 7p per day cheaper than SVR - 40.76p per day.
£6.25 per month SC discount for 12 months brings SC in this region down to 20pish per day. 20 mins after your post that I have quoted I put something in oven as I have been every evening - 15.18p kWh 😎

£6,25 per month SC trial discount per fuel = £75 per fuel per year discount in addition to Freephase Static/Fixed tariff version SC currently approx £25 per year cheaper than SVR for Electricity, unit rates costs for most people will be cheaper than SVR.
Alternative EDF signup incentive(s) to how you describe £50 credit via friend referral link + £25 cashback if switch to Freephase via TCB when switch completes as an existing customer both available for single fuel switch. ( Before you say it yes can also sign up to EDF Freephase as a new customer via TCB, not able to stack both offers I described though)

OP is currently on Tracker meaning they're forced to a flat rate theoughout the day - so even if electricuty is free during the day they will pay premium - switching to EDF FreePhase dynamic allows you to pick the right prices for you. Not as conplcitaed as Agile, avergae below 15p/kWh recently (outside 16-19), free electriicty, possible high sign up bonus.
Summer is also perfect to give it a try - if you arent able to cope with it - you can move to a fixed deal anytime.

To provide a bit of balance, FF Dynamic average you quote likely to apply to a cheaper kWh electricity region was heavily skewed by free electricity periods during World Cup when England and Scotland were playing, not likely to be repeated for four years and of course other free electricity periods all of which also available to FF Static customers. FF Dynamic has same SC as SVR.

Yes and no, OP is already on Tracker so they get the point prices vary day to day. The big downside of Tracker is that any cheap period is skewed by the expensive one and you average an average price. So if you want to run a dishwasher at anytime you cant pick the cheaper time - Dynamic offers you that - and yes on days like today it makes no difference but you can see it better on other days 25th July:
It also more or less matches Agile and here are average rates for the past 6 months:
