So I just lost a case for a private ANPR PCN and not sure what went wrong

You can't unless you get the retail parks or hospitals, etc. (i.e site managing agents or landowners) to cancel each PCN if you complain.
Go through them now and try to get many of them cancelled BEFORE claims land.
Stop accumulating these! Study signs and comply with terms. Avoid car parks.
Only park or collect passengers by stopping on-street on Sundays and evenings and not using private car parks at all. We regulars never do except if supermarket shopping. We always park on street at weekends/evenings.
You will be sued endlessly, for years now. Luckily, most cases go to DCB Legal always discontinue defended cases (except Excel, VCS and TCP cases) as long as you use the Template Defence. This will eat up whole weeks of your time. You should never have ignored these.
But NO PAYING!
You got unlucky that ParkingEye didn't farm this one out to DCB Legal.

you’re right but I was so angry by the fact that these guys are basically scammers, I started living by the principle that I’ll never pay even a penny to them because they extort money out of any one and everyone, even the vulnerable. That’s why I stopped paying entirely

Well, depending on your personal circumstances, paying is still optional.
A pensioner with no mortgage who doesn't need any credit within the next 6 years, for example.
Anything below £600 goes uncollected basically.2 -
I have gotten PCN from Asda car park stating that I was parked there for 1hour and 17 mins - captured by ANPR at 10pm at night - when there was no one there
parking eye is also handling this one and I am confused now whether to ignore it or to contact Asda - I don’t even have the email address and don’t even know what I’ll say that’ll get them to email me back with a response

Yes, contact Asda and play the angry customer card and that you shop there frequently. Going into store and trying to get the manager to cancel is a good idea.
