I'm coming from real cameras (so I can't say a lot about RAW in smartphones though the principle is probably the same) where RAW is often the preferred standard as it produces a lossless file with the complete actual sensor information with no processing at all.
Such a RAW file is normally not fit for viewing (if you google for image examples of RAW vs processed, you'll see what I mean) and it has to go through a more or less time-consuming process of "developing" which basically means going through the steps the camera firmware goes through when converting the sensor data to a JPG file... but the creator has full control over all aspects of that process. In fact, the same RAW file can be used to produce vastly different JPG files with all sorts of interesting effects.
There are quite a few apps which can do this post-processing, I'm sometimes using DarkTable though I often shoot in JPG anyway. But if I suspect that a shot merits the additional effort, I'll switch to shooting in RAW+JPG. Low-light shots with lots of noise are a good example... it's amazing what a RAW developer (and some patience...) can do there.

Not sure about the later versions of iPhones but shooting natively in ProRaw as Apple call it was only available on the Pro models.
Anything shot in a RAW format I'd be loooking to edit at some point.
Small sensors, limited aperture and low light are not ideal conditions for phone shooting but the AI algorithms on some phones make images a lot more acceptable for Instagram and similar, if that is your thing.
